    RAESMOM1612 Thanks ! I love beans of all kinds - pinto, great northern , navy, kidney etc .
    I could eat them every day ( a nutritionist recommended I have 4 servings per day )
    We do not realize how well we have it now days do we ?!? I have heard many people say years ago a piece of fat back in the pot would feed the family for a week - and if you were extra lucky you got a bite of it tucked in a biscuit to eat at school .

    Hey observant! So I do just plain white rice (uncle Bens or if I'm home I grab a bag of Goya rice) the beans is where I make my magic happen lol I use sazon, adobo, sofrito (all Goya products, sofrito I find in the freezer section at food lion), a bay leaf onion powder, Garlic powder and oregano. Mix it with either a can of Goya beans (Roman, pink, or kidney bean) or a bag of beans that I have let soak in water overnight then depending on what I have on hand I'll add some sliced onions or green olives or potatoes to the beans. If I make the can just let them come to a rolling boil for about 10-15 minutes. If I make the bag I let them go a little longer and done. I usually eat just the rice and beans alone but the people I live with like to eat meat so we will have pork chops or chicken (seasoned almost the same as the beans) to go with it. When my dad was younger in Puerto Rico he used to tell us if his mom didn't have enough money for meat that week, they would eat it with bananas!

    Jdouglas - observant had a great suggestion with the protein powders. You could do milkshakes with ice cream, whole milk and added protein powder to increase both calories and protein.

    Ascherer- thanks for the potato cakes recipe! I will try yours ( with the applesauce ) soon .
    I make mine using mashed potatoes ( clumpy ones are best ) . I use shredded potatoes for hash browns in the past ( if I am lucky they turnout same shape different texture ) .I cook my tater cakes & hash browns on a non-stick griddle plate so limited oil .
    JDOUGLAS13 - Your lemon pie sounds so yummy ! Is it possible to substitute higher fat products in your meals ( whole milk , heavy cream, sour cream ) to help your DW gain weight ?? Would protein powders added to foods be OK ?? OF course my favorite way (?) to gain is delicious desserts ! LOL

    Dinner tonight is chicken tikka masala, brown rice, sauteed zucchini, mushrooms and onions and banana bread I made this weekend for dessert.

    ascherer - thank you! They sounds just like the potato latkes I make at chanukah. I may make some this week with the sweet potatoes I have. Thanks again for the recipe!

    raesmom1612 - Have a good time at breakfast and Zumba! And great ideas for Jdouglas. We actually went grocery shopping at HT after our dinner date last night. And the bottom fell out just as we were checking out. I have not seen it rain that hard in a very long time. We were soaked! But I paid $19 for $61 worth so it was totally worth it. lolol

    jdouglas13 - that lemon pie really does sound wonderful. How about a chicken and pasta casserole with soft cooked veggies like carrots and peas. Other ideas that come to mind include tuna casserole and chili with biscuits. Those are both really hearty and pretty soft. Give her a hug from me!

    No idea what's for dinner tonight. We are gonna take the girls out for breakfast and then I have to get a grocery shopping trip in before zumba at 330. Maybe something quick and easy although I could totally go for some rice and beans from back home.

    Jdouglas does your DH do mashed potatoes and gravy? Or gravy biscuits for breakfast? Pasta is always soft and filling. Corn chowder is a favorite of mine. I can send you the recipe. You can use bacon or shredded chicken instead. Will she do pot pies? Baked potatoes? Maybe a meatloaf, how about stuffing. Now I'm extra hungry and want some comfort food lol. Hope these ideas help.

    I was meaning to post all last week about the super easy Magnolia Lemon Pie I made created by Joanna Gaines of HGTV's Fixer Upper. Very simple graham craker crust baked for about 10 minutes. The filling was a couple of cans of sweetened condensed milk, lemon juice, and eggs, beaten well, poured into the parbaked crust, and then baked for another 15 or so minutes. So simple, but really good. DW liked hers topped with whipped cream, but I didn't think it even needed it.

    If anyone wants the recipe, let me know.

    Shrimp enchiladas with guac! Homemade potato pancakes! Yum to both. We are still eating semisoft food here, so mac & cheese with diced ham in it, and roasted broccoli. I got to have all the brown crunchy parts off the top of the M&C. :)

    I sure could use some ideas for Sunday. DW is losing weight at a fairly alarming rate, so I'm trying to make hearty dinners for her. I have a London broil in the freezer that, if I take out now, could probably defrost in time to make pot roast with mushroom gravy for tomorrow.

    Shred 1 large onion and 4 large potato. Drain them well. Add 1 beaten egg, 2 tablespoon flour, and salt and pepper to taste. Fry in small pancakes until browned and done. Serve with apple sauce and/or sour cream. They will need more salt after cooking but remember potatoes absorb salt while they are cooking and it is easy to get them to salty. Enjoy

    Let me tell you - Jose and Sons Mexican restaurant in downtown Raleigh was DELICIOUS!! I had the enchiladas del mar (shrimp enchiladas) and they were fantastic. The guacamole is amazing and the service and atmosphere were wonderful. I highly recommend this restaurant and we can't wait to go back.

    Have fun on your night out with your sweetie Faye!! Last night was a blast and I'm paying for it today lol so tonight will be creamy pork chops in the oven with mashed potatoe and veggies.

    Tonight my sweetie is taking me to a restaurant in downtown Raleigh that we have never been to before - Jose and Sons. Have any of you eaten there? If so, what do you recommend?
