Do you have a favorite holiday cookie or other baked goodie that you love to make (or eat) every year? Here's the place to post the recipe so we can have a digital cookie swap!

Banana Bread Recipe

Ingredients

3 or 4 ripe bananas, mashed
1/3 cup melted butter
1 cup sugar (can easily reduce to 3/4 cup)
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of all-purpose flour

Directions

Preheat the oven to 350°F. Spray or butter bottom of loaf pan. Mix butter and mashed bananas in a mixing bowl. Mix in the sugar, egg and vanilla. Add baking soda and salt. Slowly mix in the flour. Pour mixture into loaf pan. Bake for 50 minutes to 1 hour until knife inserted near center comes out clean. Cool in pan for 5 minutes and then remove and cool on rack. Delicious served with cream cheese or Philadelphia Indulgence chocolate cream cheese.

drcyndimd - awesome, because those crock pieces that I got last year are like the mini loaf pans - and I have the bamboo skewers too :) YES! I'm very excited about that recipe! We love cranberry anything so we'll enjoy our share of that too during the holidays. May end up becoming a regular item that I'll batch cook and flash freeze then vacuum seal for quick access :)

Nancy - you're very welcome. If you use the small loaf pans, the cooking time is a little less. I just eyeball it & test with a bamboo skewer (instead of a toothpick). Enjoy!

drcyndimd - that cranberry bread sounds WONDERFUL! That may be just what I'll be giving to favorite cashiers this year! I make my own applesauce and have used that in quick bread recipes and it does make them so moist - so yup, I think I'm IN on that recipe!

Last year after the holidays, HT had their little Christmas bread crockery pieces on clearance and I have a bunch of them so that will be perfect! They also had really cool small micro sized bundt pans made out of heavy baking paper on clearance too, that cranberry bread would look awesome in those! And of course all these containers are holiday color/decorated :)

I just posted a quick recipe for LindaLarry whom I had the pleasure to meet at the Clayton coupon swap this morning, along with a number of other wonderful women. I'm kinda tuckered from all the excitement, but will be back later this evening or tomorrow with more recipes! :)))

Sugar-Free Cream Puffs for LindaLarry: I make a basic cream puff recipe. Take a look at recipe #203416 at Food.com, and follow that recipe for the puffs. The only thing for the puffs that I do differently is rather than a greased pan, I line the pan with parchment paper. The other thing I do is make them small--about the size of a half dollar, and no more than 1/2 inch thick. There is something very pretty and dainty about little puffs.

For the filling, I buy the large box of Jello Sugar-Free Instant Vanilla pudding. Use an electric mixer to make it, and substitute half the milk with heavy cream.

To fill the puffs, I like to fill a pastry bag with a small round tip with the pudding mixture, stab the puff on the side, and squeeze in the pudding. You'll know when it's full.

Note that this is sugar-free, but NOT carb-free, which can be a problem for diabetics. For non-diabetics, I glaze the top of the puffs with chocolate as described in the recipe. Enjoy :)

Just a couple of variations from what others posted. Put peanut butter between Better Cheddars and dip half into white chocolate. YUM! Also, with the BC peanut butter cookie mix I put them in lined mini muffin tins and bake for 8-9 minutes. When they come out of the oven stuff a miniature reese's peanut butter cup in there and allow to cool. These go quickly! Of course, it all goes quickly at my house...

I have a lot of BC cookie mix that I got when it was free at Lowe's. I will using it for some of my treats this year. Easiest peanut butter blossoms ever with the cheap kisses from CVS.

Ran out of room

dough forms. If dough seems too wet, add an extra tablespoon or two of flour.

Roll dough into 1 1/2-inch size balls. Place balls onto ungreased cookie sheet. Bake for about 12 – 15 minutes or until cookies turn slightly golden brown but don’t over cook.

Remove cookies from cookie sheet to a cooling rack. Cool for a minute or two. Place powdered sugar in a bowl and roll the warm cookies in the powdered sugar. Set cookies aside to cool and then roll once more in powdered sugar.

Note: Be sure to roll balls large enough or they may flatten out when they bake.
