    Thanks for the recipe, DrD, it sounds really good. I'm going to have to try making some almond flour. I've never bought it because it is so pricy, but maybe homemade will be more affordable.

    I'm not sure if this is just on my feed, but there seems to be a lot of 4 SB videos today on the Watch section. I don't think I've seen ones with that many SB before!

    The pumpkin walnut muffins are indeed yummy and healthy, and they make a great on-the-go snack because just one is so filling/satisfying. I do grind my own almond flour from whole almonds in the blender or food processor. It doesn't come out as finely powdered as store bought, but in muffins like these a little extra nutty crunch is no problem. :-)

    Dr D - those pumpkin walnut muffins sound wonderful! So many yummy and healthy ingredients packed into one little muffin. I am going to have to make these.

    Thanks JDouglas, that's a good idea! Meanwhile, I've found that my Aldi does now carry almond butter, although, sure 'nuf, as TWINREDHEADS pointed out yesterday, the regular price for the HT brand is actually less per ounce. Plus, the HT brand ingredient list contains only almonds, while Aldi's Simple Truth brand has additions such as palm oil and cane sugar, which IMHO aren't a bit necessary because almond butter made with only almonds is really yummy. And yes, I have multiple baking recipes which call for almond butter. Here's one of our current favorites, for pumpkin muffins:

    DrD, I was thinking about your almond butter search, and if there are certain brands you like, it might be worth emailing the company for coupons. I've found that sometimes it is easier to get coupons for some of the less common brands or products.

    It also sounds really delicious! I'm going to have to try it. My baking brain is coming up with all sorts of things to incorporate it into.
