    Nakabi, when you freeze roasted peppers, do they turn to mush upon defrosting? I love roasted peppers in salad.

    Raemom, please stay safe! Blizzards up there are nothing to fool around with. Wait till the roads are really clear before you head back. I know this is nothing you need to be told, I'm just a mama bear at heart I guess :)

    Has anyone used Hopster for coupons? Kind of an interesting/ bizarre way of getting coupons.

    Thanks everyone. I think my problem was I just popped the peppers whole into the freezer as we were leaving for Christmas. It made them really mushy and hard to chop.

    ThomasG ~ thanks for the birthday well wishes, the party was amazing!!!! Now we are stuck in buffalo! There is a blizzard going on, first one in 20 years!! Just our luck.....its 2 degrees outside with a wind chill of -35!!!!!!

    You do not *HAVE* to blanch peppers.

    I cut mine into strips or diced, and use them for soups, chili, fajitas, and pasta sauces. I agree with patting them dry & allowing as little extra air in the Ziploc bag.

    I don't blanch my peppers either. I sometimes roast them before I freeze them to get that roasted flavour for soups or quesadillas.

    I think we freeze more peppers than we use them fresh between the sales at Aldi and our summer gardens. Like most people have said we cut them up and freeze them in ziploc bags. I prefer to cut them a few different ways. I will freeze a bag of some that are cut in small squares for adding to sauces and omelettes as well as a bag of ones cut in long strips for use in fajitas and stir fry. This way when I'm ready to use the peppers I just pick which kind and throw them straight in the dish from the freezer.
