Packy - to make sure my crust is cooked through when using the raw HT dough, I roll it out on to the pizza stone, brush with a little EVOO and spice it up with some garlic and Italian seasonings then bake at 400 for about 7 minutes. Once the dough has baked for 7 minutes, I take it out of the oven and top it with pasta sauce, then veggies, then cheese, then more garlic powder and Italian seasoning. Then I put it back in the oven and bake for another 10 minutes or so until the edges begin to brown and all the cheese is melted.

My fave make-at-home pizza is white pizza. Brush the dough lightly with garlic oil, top with ricotta cheese mixed with a bit of Italian herbs spread thinly, then top that with shredded mozzarella. I like to top that with shaved proscuitto which I then brush with more garlic oil. Oh. My. Yum! :) (PS garlic oil = smash a few cloves of garlic, simmer very gently in EVOO with a small pinch of salt until fragrant, but not browned.)
