Monday meal plan

This week we will be enjoying chicken quesadillas, Italian chicken pasta casserole, teriyaki tofu, omelets and more! What's on your menu this week?


Chicken quesadillas with roasted orange peppers (Sanderson Farms chicken breast on sale for $1.99/lb at Lowe Foods through 10/16 and multi-color peppers on sale at Kroger for $1 through next Saturday)

Spanish rice

Orange slices



Italian chicken pasta casserole (leftover chicken, cooked penne pasta, pasta sauce, some Progresso portabella mushroom sauce to make it a little creamier, sliced mushrooms, chopped onions, chopped green pepper, garlic powder and Italian seasoning to taste, Parmesan cheese, mozzarella cheese – combine all and cooke for about 30 minutes at 350)

Garlic bread




Veggie burgers

Sweet potato fries




Omelets with choice of veggies, cheese and veggie bacon

English muffins or toast

Orange slices



Teriyaki tofu and vegetables (Nasoya tofu on sale at HT through 10./15 for $2)


Pear slices (on sale at Kroger for $1.29 through Saturday)

    Mon - Mini meatloaf, Fleishman's yeast bread, cheesy broccoli, fruit
    Tues - Spainish Rice (grnd beef, cooked rice, canned tomato topped with shredded cheese), leftover bread, fruit
    Weds - Fair day for us; Dinner will be sandwiches or soup
    Thurs - Poppyseed chicken casserole (new recipe for me), egg noodles, green beans, fruit
    Friday - Friends house for pizza

    Nakabi, you menus always sound so good! Love lamb chops, but never find them cheap enough to buy them. I prefer the loin or the rib chops. And I'm crazy about fresh rosemary. Do you grow it?

    Menu... well, last night I unearthed some baby back ribs from the freezer, made some BBQ sauce, and served with rice and salad. Tonight will be white pizza with proscuitto and salad. After that who knows, although I've been on a grilled chicken breast kick lately, so that will probably show up on the menu as well as some kind of pasta -- maybe fettucine alfredo made with my parm cheese!

    M- Crockpot chicken seasoned w/Mrs. Dash garlic & herb, wild rice, broccoli T- Beefaroni (loaded w/veggies), salad, bread W. Leftovers - not sure rest of the week.

    caniac - no real recipe here, which is why I just included the ingredients above. I usually use about 2 chicken breasts shredded, 1 lb pasta cooked, 1 jar 26 oz or so pasta sauce, abotu 1/2 can Progresso cooking soup, 4 oz shredded cheese (whatever we have on hand), 1/4 cup Parm cheese, 1 green pepper chopped, 1/2 onion chopped, 1 can mushrooms sliced, garlic powder and Italian seasoning and pepper to taste. Mix all together and baked for 30 minutes at 350. I have some orange peppers left from dinner tonight so I will include them as well.

    Tonight-BBQ, homemade slaw, corn & spaghetti squash dessert from the local dish on WRAL; T-Meatball marinara subs (my son says mine are better than Subway :), french fries, fruit; W-DiGornio pizza, salad; TH-Chicken w/rice, fruit; F-Leftovers

    Tonight-tacos, tomorrow night-pork tenderloin cooked in the crockpot, mac & cheese & green beans. Weds night-TV dinners (b/c I have nursery duty at church), Thurs night-an all veggie supper since the kids won't be home. Fri night is usually our eat out night.

    hi nakabi!

    That name sounds pretty bad, doesn't it? :-) I call it that because I literally dump whatever I want (it is usually leftovers) in with the basics. I usually strip a Costco rotisserie chicken (big, fat birds for $4.99 and they have a TON of meat on them), I cook up whatever rice I have (varies b.w brown and white---I just use whatever is closest to expiration date from my stockpile), 1-2 cans cream of mushroom soup, then veggies. I ALWAYS add onions (b/c we love them) and then also a variety of whatever I have on hand: chopped green/yellow/red peppers, diced celery, chopped water chestnuts, chopped uncooked broccoli. I add milk to make it the creaminess I want, top it with shredded cheese (again, I have used cheddar, mexican etc. whatever I have that needs used up) and bake it at 350 for about 30 minutes. I top with french fried onions and bake another 5 minutes. Makes a DEEP 9 x 13 dish and tastes great reheated too.
    Everyone loves it!

    Mon---Zaxby's (today only they have the buy it today and then get the same thing free b/w 10/22 - 11/4 @ the Zaxby's in North Raleigh in Harvest shopping plaza); Tue----chicken quesidillas w/spanish rice (already had this planned and laughed when I read your menu, Faye!), W--- scrambled eggs, hash browns, fruit; Th---Baked Pizza Spaghetti, garlic bread, salad; F -- Chicken dump casserole, green beans, applesauce.
