Vanilla crazy cake

It was another Friday night after another long week and my girls and I had plans for a cozy movie night.

And, for some reason, as they got ready for the big viewing, I got a hankering for something sweet. Cake, specifically.

I grew up making chocolate wacky cake, a super easy homemade cake mix that includes vinegar and oil, along with other ingredients, that you can mix up right in the pan. My mom gave me the recipe, handed down by her own mom, who relied on it during the Great Depression because it doesn't require milk, butter or eggs.

I have only ever made a chocolate version, but I was all out of unsweetened cocoa. Surely, I could make a vanilla cake too. After a quick search online, I found countless versions of the same cake - except vanilla. It took 10 minutes to mix up and 35 minutes to bake. Half way through the movie, we had a sweet, moist cake to enjoy.

Vanilla Crazy Cake
Adapted from Sweet Little Bluebird

1 1/2 cups + 3 tablespoons all-purpose flour
1 cup white sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon white vinegar
2 teaspoons vanilla extract
5 tablespoons vegetable oil
1 cup water

Preheat oven to 350 degrees F.

Grease an 8 inch square baking pan. Mix the dry ingredients in the pan. Then make three depressions in those dry ingredients. Pour the vinegar in one depression, the vanilla in the other and the vegetable oil in the third. Then pour water over all of it and mix very well until smooth.

Bake for 35 minutes. Cool and then top with your favorite frosting (though it's yummy without any frosting as well).
