I'm a fan of meals I can prep the night before, and this one is so easy.

You can quickly slice up the veggies and boil the potatoes the night before, so all of the ingredients are ready to toss into the skillet when it's time to eat.

Here's how to get it done and on the table. It's adapted from EatWell101.com.

Sausage, Pepper and Potato Skillet

1 package pre-cooked Italian chicken sausage (usually four to five links), sliced
1 pound baby potatoes, quartered, or fingerling potatoes, halved length-wise
1 onion, diced
2 bell pepper (any color)
4 tablespoons olive oil
2 teaspoons Italian seasoning
1 teaspoon garlic, minced

Salt and pepper, to taste

Chop up the veggies and sausage. If you're using them the next day, store them in the refrigerator. Put the potatoes in a pan of boiling water and cook for about eight minutes or so. Drain and store in the refrigerator if you aren't using them right away.

When you're ready to cook the meal, put a skillet on medium heat and heat up about three tablespoons of oil. Add the cooked potatoes and some salt and pepper. Cook just a few minutes until they are warmed, golden and cooked through. Put the potatoes on a plate.

In the skillet, add another tablespoon of oil and brown the sliced sausage. Then add the garlic, onion, bell pepper, Italian season and salt and pepper. Cook until the veggies are soft - about two or three minutes. Add in the potatoes and mix together. Serve!
