Renee Chou shares this recipe for apple walnut cake.

"This is something my mom would make during the holidays after adapting the recipe from a family friend," she tells me. "Love that it’s not too sweet nor rich, but very moist. Fairly easy to make! The only thing that takes a bit of time is chopping the apples and walnuts."

She adds: "This is especially good when served cold and the day after, so after it cools, stick it in the fridge and then serve!"

Apple Walnut Cake
1 ¾ cup sugar
3 eggs
1 cup oil
1 tsp vanilla
2 cups flour
1 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1 tsp baking soda
3 cups apples, chopped into pieces (I use two large Granny Smith apples, but any other apple you like will work just fine)
1 cup walnuts, toasted and chopped

Mix all ingredients except for apples and walnuts. Add apples. Sprinkle nuts over top of cake. Spread in 13x9 cake pan. Bake at 350 degrees for 40 minutes.
