St. Patrick's Day is just around the corner and Chef Hannah and I stirred up a ton of fun in our North Hills studio making these super easy rainbow cupcakes! So easy to make and so impressive that your only challenge will be keeping that sneaky leprechaun from stealing them all for himself!

Rainbow Cupcakes
1 package white cake mix
Food coloring (whatever colors you like best, or mix to make unique colors)
3 eggs
2 Tablespoons oil
1 1/3 cup water
Cupcake liners
Non stick spray (such as Pam)

Icing and sprinkles for decorating

Preheat oven to 350 degrees. Spray your muffin pan or cupcake liners with non stick spray for easy clean up! Mix cake mix, oil, water and eggs until well blended.

Pour in equal amounts into four separate bowls. Add about 5 drops of food coloring into a bowl and stir. Repeat with other colors in the other bowls so you end with four bowls of batter in four different colors.

Put a small amount of cupcake batter from one bowl into the muffin pan. Scoop small amount of second colored batter on top of first color in muffin tin. Repeat with all the layers. Be sure not to mix the colors, or you'll end up with a tie dye one like Chef Hannah's in the video!

Once you've completed all the colors, bake in the oven for about 15 minutes until center is done. Remove and cool. Decorate with icing and sprinkles! Makes about 18 cupcakes. Keep away from sneaky leprechauns!
