Recipe: Pesto chicken

Looking for a new, easy way to roast chicken breasts? Try this one that requires just four ingredients.

A friend shared this recipe on Facebook a couple of weeks ago. As soon as I saw it, I knew I'd try it.

I'm always looking for yummy ways to cook up boneless chicken breasts that give them some nice flavor, but don't dry them out. And, I had a bunch of frozen homemade pesto in the freezer and lots of tomatoes left in the garden. This recipe, shown on Buzzfeed, did the trick. And, bonus: It requires only four ingredients.
Pesto Chicken
Three chicken breasts (The three together totaled about two pounds)
Pesto
Tomatoes

1 cup mozzarella cheese

Preheat the oven to 400 degrees. Top each of the breasts with a healthy amount of pesto. Top the pesto with slices of tomato. (The original recipe calls for Roma tomatoes, but I just used regular tomatoes from our garden). Top the tomatoes with some mozzarella cheese.

Bake for 30 to 40 minutes.

You can serve the chicken with rice or pasta, but I really enjoyed it with some spaghetti squash.
