Recipe: Ice cream bread

It doesn't get any easier than this. Well ... I suppose you could just eat the ice cream. But, for some reason, I don't feel as bad feeding my kids this for breakfast instead of straight up ice cream.

I read about this recipe a few months ago and thought I'd try it out with my six-year-old. This was a fun and simple recipe for both of us and turned out a yummy bread that tasted great the next morning, toasted, with some butter and strawberry jam.

You can use any flavor, though light and non-dairy varieties don't work as well. I might try this with butter pecan next time I make it. We started with strawberry.

Ice Cream Bread

1 pint of ice cream, melted
1 1/2 cups self-rising flour

Preheat oven to 350 degrees. Mix the two ingredients until just blended. Bake until done. It took my loaf about 40 minutes. Serve!
