I featured Cary mom Judit Beres, owner of Neomega Nutritionals, a food company that specializes in specialty cooking oils, last week. She shares this recipe for one of her daughter's favorite dinners, which takes all of 10 minutes, fried plantains with homemade fruit yogurt.
Fried Plantains with Homemade Fruit Yogurt

Peel and cut the plantains in 1 inch thick rounds.

Brown both sides for 50 seconds in 100 percent pure avocado oil.

Once ready, serve with choice of yogurt.

Beres makes organic raspberry yogurt topped with frozen blueberries to counter the summer heat. To make the yogurt, add 2 cups of full fat organic yogurt to blender. Add fresh or frozen berries and 1 tsp. of agave nectar or honey.

In the winter, she serves it with full fat vanilla or plain yogurt to which she adds 1/2 tsp. cinnamon, 1/2 tsp. turmeric, 1/2 tsp. lemon juice and 1/2 tsp. melted coconut oil to help absorb the turmeric, a natural anti inflammatory and immune booster.
