I love one-pot meals! What’s not to love?

My children love pasta and I’ve found that it is harder for them to turn down veggies if they’re already mixed in. Preparing one pot meals is so quick as everything just goes into the pot and you can walk away and spend time with your children instead of spending time at the hot stove!

Added bonus: You only have one dish to wash, which is a huge win! This is a great summer recipe because tomatoes and basil are abundant in backyard gardens and farmers' markets. This is a super simple recipe that you can make with those yummy tomatoes and basil growing in your garden!  Enjoy!

Easy One Pot Spaghetti
½ pound spaghetti noodles
2 teaspoons salt
1 teaspoon oregano
1 teaspoon black pepper
10 fresh basil leaves
1 can of diced tomatoes, or fresh diced tomatoes from your garden

1 quart of chicken broth

Put all ingredients in one pot. Turn on medium heat. Stir occasionally. Check back in 30 minutes for an amazingly simple recipe! Top with grated parmesan!
