Easy chicken tikka masala

If you're expecting a recipe for real, legit Indian food, you're in the wrong place. If you're looking for a quick, easy and tasty dinner to whip up on a weeknight, keep reading.

I came across this recipe in a recent issue of Family Circle as part of a feature on meals with marinara sauce. After searching around on the web, I found several other versions of the same recipe, including this one on ChefDeHome.com.

It's a brilliant way to use a pantry staple - marinara sauce - and stir up something that isn't the usual spaghetti.

Easy Chicken Tikka Masala

1 to 2 pounds chicken breast, diced into bite sized pieces
1 jar marinara sauce, 23 to 24 ounces
2 teaspoons garam masala
2 tablespoons butter, unsalted
1/4 cup heavy cream
1/2 teaspoon cayenne pepper
1 tsp granulated sugar or honey
2 cloves of garlic, diced
Salt, to taste

In a skillet, melt one tablespoon of butter. Stir together the chicken, Garam Masala and cayenne pepper until the chicken is coated in the spices. Then cook the chicken in the skillet until it's browned - about three to five minutes.

Once the chicken is cooked, add the marinara sauce, sugar or honey and garlic to the pan. Once it starts to simmer, cover the pan, reduce the heat and let it simmer for about 8 to 10 minutes, or until the chicken is cooked through.

Then, take the pan off the stove and add the heavy cream and remaining tablespoon of butter. Stir well. Serve over rice or with naan.

This recipe makes plenty of sauce, so I cooked up two pounds of chicken. The dish was big enough to serve my family of four (small eaters)  two dinners and a couple of lunches.
