Recipe: Chewy butterscotch and chocolate chip cookies

These cookies are so yummy ... and help get rid of those lingering bags of chocolate and butterscotch chips you might just have in your pantry too.

Chewy butterscotch and chocolate chip cookies

When my older daughter said she wanted to bake something the other day, I asked her to find something that would use the partial bags of butterscotch and chocolate chips that are lingering in the pantry.

After a search online, she turned up this recipe from StuckonSweet.com, made the cookies, cleaned up all of the mess and even snapped the photo so I could share these delicious cookies here on Go Ask Mom.

It was a win-win all around. And I got to eat some yummy cookies.

Chewy Butterscotch Chocolate Chip Cookies

¾ cup unsalted butter, softened
¾ cup brown sugar
¼ cup granulated sugar
1 egg
2 teaspoons vanilla extract
2 cups all purpose flour
2 teaspoons. cornstarch
1 teaspoon baking soda
½ teaspoon salt
¾ cup semi-sweet chocolate chips

¾ cup butterscotch chips

Preheat your oven to 350 degrees.

Cream together the butter and sugars until fluffy with a hand mixer or stand mixer, using the paddle attachment. Add in the egg and vanilla and combine.

In another bowl, whisk together the flour, cornstarch, baking soda and salt. Then, add the two mixtures - the flour mixture and the butter and sugar mixture - together. Stirring in the butterscotch and chocolate chips once they all are combined.

Grease a baking sheet and spoon out the dough onto the cookie sheet. Bake for 8 to 10 minutes.

This recipes says it makes 34 cookies. My daughter made larger cookies - so it came out to a total of 24 and they took about 15 minutes to bake.

Let them cool on a sheet for a little bit, then move them over to a wire rack to cool completely.
