Bacon Egg Cups
1 package pre-cooked bacon
8 large eggs
1/2 cup cheddar cheese, grated
salt and black pepper to taste

2 tablespoons chopped chives

Preheat oven to 325ºF. Spray muffin pan with non-stick cooking spray and set aside.

Arrange each slice of bacon around the edge of each muffin cup, creating a circle around the edge. Add bacon to the bottom.

Crack eggs into a bowl. Add cheese and salt and pepper.

Top with chopped chives.

Bake 12 - 16 minutes, based on your preference for the egg consistency.

Remove each cup from muffin pan with a spoon and let cool. Enjoy!
