Recipe: Apple stuffing muffins

Take advantage of the fall apple bounty with this recipe for savory muffins.

Apple Stuffing Muffins

Ingredients:

6 cups bread cubes (See below)
1 cup diced apple
1/3 cup finely-diced onion
1/2 tsp. minced sage
1/2 tsp. fresh thyme
Dash of cinnamon
1/4 cup apple juice
1 1/4 cup chicken broth
Maple syrup

Making Bread Cubes

4 slices whole wheat bread
4 slices oatmeal bread

Cut bread into cubes. Arrange on baking sheet. Spray with olive oil cooking spray or drizzle, lightly, with olive oil. Broil, on low, for about 1 minute on each side.

Directions:

Saute onion. Add apple, sage and cinnamon. Mix all ingredients and then spray muffin tin with olive oil. Press gently into muffin tins. Drizzle lightly with maple syrup. Bake at 350 for approximately 30 minutes. Serves 10.

8 a.m. to 1 p.m., Saturday: The Annual Fall Craft Fair features more than 40 local artists’ hand-crafted works: pottery, jewelry, holiday décor and gifts, stoneware, baby and children’s gifts, birdhouses, hand-knitted and felted accessories, glassware, natural soaps, lotions and much more. All artists live and produce their works within 125 miles of the market. Music from Kyle Scobie.

8 a.m. to noon, Nov. 10: The fall season is officially upon us. Enjoy the crisp weather with your family at WWFM. Come out and show your support for WWFM as we wrap up our Annual Fundraising Campaign. A day of music from The Saucy Crawtails and education from Sprouting Souls is sure to make for a fun Saturday.

8 a.m. to noon, Nov. 17: Shop before Thanksgiving Day at the market. While you’re getting ahead of the game by shopping early for Thanksgiving dinner, enjoy the day at WWFM. The Saucy Crawtails will keep the energy alive while you shop with our farmers and vendors.

2 p.m. to 5 p.m., Nov. 20: Pre-Thanksgiving Market. The official shopping scramble to Thanksgiving begins! Talk with our farmers about new ways to prepare a traditional meal. We will have staples like potatoes for creamy mashed potatoes and unexpected items that are sure to be crowd-pleasers, too.

Saturday, Nov. 24: Market closed.
