Since the city of Raleigh took over the water and sewer system in Wake Forest last year, inspectors have been enforcing the ordinance, which requires all food-preparation businesses in the city's jurisdiction to have grease traps.
Grease traps collect grease that would normally go down a sink's drain. City officials say the traps are vital in helping to prevent sewage spills, because grease can harden and clog up the sewage system.
Two downtown Wake Forest restaurants -- The Corner Ice Cream Shop and Burkenstock's -- reportedly closed instead of installing the traps.
"I hate to see it happen. It is a significant thing, but at the same time, these businesses have to comply with these regulations," Wake Forest Mayor Vivian Jones said.
