Monday meal plan

At the very busy Casa de Prosser this week, we will be eating Rotini and marinara, tilapia, breakfast casserole, chicken sausage with sauteed veggies and more! What's on your menu this week, tonight or any night?

Meatless Monday!

Veggie chicken parmesan (using Morningstar veggie chicken patties bought at HT super doubles this week with $1.50/1 coupon from using 1000 points - made the box of veggie chicken patties only .29 after sale and doubled coupon!)

Rotini and marinara sauce (from the HT Barilla deal last week)




Baked sweet potatoes



Breakfast casserole (eggs, turkey bacon, cheese, green peppers, mushrooms, onions, seasoned croutons – see recipe in WRAL recipe database)

Hash browns

Fruit salad


Chicken sausage sautéed with peppers, onions and mushrooms on rolls (Johnsonville chicken sausage that was BOGO at HT recently with coupon and ended up being $1.25 per package)

Saffron Rice (free at HT and LF with .50/1 coupon)

Steamed carrots ($1.17 for 2 lbs at HT every day)


Chicken tacos with the slow cooker chicken I batch cooked and froze last week as well as all the fixings in a taco bar (lettuce, tomatoes, onions, black olives, cheese, sour cream, salsa)

Whole grain rice

Sliced oranges

    jdouglas - as long as you're eating something, we'll let it slide this week. :-)

    And thankfully the tuna/jello meal was a one-time experiment when my husband was young.

    P.S.: Yes, I'm stalling with my non-existent menu. Last night we had spaghetti and meatballs with garlic bread. All from the stockpile, of course. ;)

    Thanks Kat! Great buy on the cauliflower, and your recipe sounds wonderful. Turns out I've been making chicken milanese forever, just didn't know the name of it LOL... Don't you love smittenkitchen? I think she was in the Triangle recently for a book signing.

    Faye, I have an awful, mostly supressed memory that actually involves something with gelatin and canned salmon? Yikes! And that tuna-jello combo sounds very scary! LOL. No offense intended, of course :)

    jdouglas13- I bought the cauliflower from Aldi last week for around $2.00. I roast it with Indian spices (tumeric, cumin, cayenne, lemon, garlic). The chicken milanese is a cinch to throw together - here is the recipe I love:

    Actually, my dear mother-in-law once made a tuna jello meal according to my husband.

    kat, did you find a sale on cauliflower? I really like cauliflower, but haven't found it on sale anywhere. Sounds delish, as does your chicken milanese. Do you mind sharing how you make it? And I really don't need to say anything about Irish Soda Bread - yum!

    Goodone, it sounds like you are eating almost for free this week! Wow, great job!

    Nakabi, no problem -- I'll be glad to help with the gnocchi and/or caesar salad. We can talk about it when I come for dinner for the shrimp fajitas and lentil soup! ;) And your homemade tortillas sound amazing.

    My last rice pudding experiment included a can of sweetened condensed milk. It was really really good, but SCM is pricey and I would not buy it just for rice pudding. I just happened to have a can in my pantry that was on the use-it-or-lose-it list.

    Faye and smolder, I completely get the texture thing. I have a few things myself that I really dislike mostly due to texture, with jello and fish cooked anything less than well done being at the top of the list. I think it is all the "special" foods I was fed when I was a kid LOL.

    Jdouglas-When I make rice pudding, I like to add some evaporated milk to it.

    M-Shrimp fajitas with homemade tortillas, rice, guacamole, pinto beans
    T-Lentil soup, baguette
    W-Going to attempt to make empanadas...
    Th-Blacked mahi mahi, spinach/strawberry spinach, mushroom risotto
    F-Gnocci, Caesar salad, (jdouglas-I may be calling you for help on this one lol)

    LOL. I'm with you, Faye. Pudding should not have chunks. :)

    After digging through the cabinet and actually messing with chicken I had, here are more definite dinner plans for the week: baked chicken/french bread sandwiches with salad; chicken marinated in Ken's balsamic and roasted onion marinade, yellow rice and broccoli; chicken with rosemary and roasted garlic fresh take, quinoa and salad; chicken pot pie full of veggies and homemade chicken stock; leftovers/freezer surprise.
