Roasted Lemon Herb Chicken (using a whole chicken from HT .69/lb deal a couple weeks ago – they are also on sale for .67/lb at Food Lion this week through Tuesday, 2/26)
The recipe I am using is from AllRecipes.com. I am making some small changes to this recipe based on the comments including adding a quartered onion, 4 cloves of fresh garlic, fresh rosemary and the squeezed lemon halves to the cavity prior to roasting. I am also omitting the mustard powder and adding some chicken broth at the bottom for basting.
Saffron rice (free Mahatma rice at HT and Lowes Foods with .50/1 coupon doubled)
Roasted asparagus (using raincheck for $1.47/lb sale price from HT last week)
Friday
Breakfast for dinner!
Veggie omelets with choice of veggies including mushrooms, green peppers, onions, spinach, black olives, cheese
Croissants
Fruit salad (hoping for some good fruit sales at Aldi starting Wednesday)

We still eat that way -- mostly from the freezer and pantry, that is, since we live so far out in the country and only get to the store once a week or so.
Final suggestion: check out the book "Desperation Dinners" by Beverly Mills and Alicia Ross. I read them more for inspiration and quick tips than for specific recipes, and found it very helpful. They also have two other books. Amazon has used ones for under $5 right now, but see if you can find it at the library first to see if you like it. It only took me 40 years to learn that tip! (library before purchase for cookbooks) LOL :)

NCishome, I feel for you and remember those days when I didn't get home until 7:30 or later and had to pull dinner together. I tried to keep the pantry well stocked will things that go together fast and have quick defrost times. When you get home from the store, divide up packages of meat into individual serving portions and wrap separately. I recall having lots of pasta and sauteed veggie concoctions. You can eat it as is, or add shrimp, chicken, or pork. Do you have a grill? I made a lot of boneless grilled chicken. Throw the parts(ok if frozen) in a ziploc bag, add your fave marinade or BBQ sauce. I like EVOO, lemon juice, garlic, herbs. Put the bag in a bowl in case it leaks, and put in the fridge the night before or that morning. Make enough that you can have it a few nights.

If you can batch cook some ingredients on the weekend (or whenever your days off might be) that would help. You can cook up a whole chicken or a few lbs of chicken breast and use it in various dishes all week & freeze some for later. Cook up a few lbs of ground beef and put in 1/2 lb or so meal portions into freezer bags to use when needed.
I sometimes make casseroles the night before so I just have to reheat in the microwave for dinner on our very busy nights (like the baked ravioli on the menu for Wednesday night.)
Any whole dishes you can cook in advance and freeze will also save you a ton of time (& trips through the drive through) each week.
Things like soup, chili & casseroles all freeze well. Baked chicken & beef stew freeze very well.

Somehow with just the two of us and getting home later than normal 5pm. Fastfood take home has won the battle. Good to see that planning meals still work (we use to do that). Working at cooking ahead and planning.

Nakabi, your DH is awesome for surprising you with your rosemary plant! M-Leftover chicken roll-ups (proscuitto, provolone,spinach) with mushroom sauce, rice, broccoli. Next time I'll swap spinach for roasted red peppers and omit the mushrooms. T-spaghetti with Italian sausage, Caesar salad, crusty rolls. W-Italian pasta, bean, and kale soup, rolls. That's all I've got :( But, I did create a new spreadsheet to log each night's menu, so at least I might have some ideas to fall back on in the future. And I'm planning to bake some Irish soda bread scones this week. Yum!

I have a cold and could not picture any real cooking for anyone tonight so this is perfect.
pss3 - it does not have 1,000,000 calories thankfully.
I think I'll use cooked frozen chicken I already have in the freezer for the tacos tomorrow.
Congratulations on your giant rosemary bush! Sounds like you need to plant it outside before it takes over your kitchen! Our rosemary bushes in the front yard are also huge which is good because we love fresh rosemary!

Tuesday: Butterball turkey burgers, sweet potato fries.

Thursday: free pizza from Papa John's
Friday: Macaroni and cheese casserole with hot dogs, green beans.

erinlikescoupons-I see you are a fellow millet lover! We eat millet back home a lot and I don't see too many Americans eating it..mmmm
M-Grilled salmon (always cheapest at Intl store for $2.50/lb), roasted red potatoes w/rosemary, Caesar salad T-Lentil soup, wholewheat rolls W-Mojaras (Mexican fried tilapia), sofrito rice, salad, homemade tortillas Th-Beef tajine, baguette F-Homemade pizza using homemade pizza dough, bacon, spinach, leeks, onions, mushrooms, and lots of fresh rosemary.
Speaking of rosemary-My poor rosemary bush got overplanted accidently a month or 2 ago so I haven't had fresh rosemary since :( Hubby surprised me and got me a rosemary bush for Valentines day. It's HUGE! taller than my 3 year old son and GIGNANTIC ALL AROUND! Seriously, every time I see it in my kitchen, I think a Christmas tree is growing lol...

W - Homemade pizza (cheap dough at HT, cheap cheese at HT, cheap pepperoni at Dollar Tree, cheap mushrooms at Aldi)

F - Twongo restaurant deal.
Sat - Vegetarian chili and making homemade soft pretzels.
Sun - Crockpot meal with leftover veggies, whatever meat I pull out of the freezer this week, wild rice, and lentils.
