Monday meal plan

Published: 2013-02-25 11:09:03
Updated: 2013-02-25 11:09:03

On the menu this week, we have roasted lemon herb chicken (recipe included), baked ravioli, chicken tacos, veggie omelets and more!

What's on your menu today or any other night this week?

Monday

Crispy honey chicken

Egg rolls

Steamfresh Asian vegetables

Tuesday

Chicken Tacos using leftover chicken from Monday night, Wholly Guacamole salsa that is FREE at HT after coupon is doubled, choice of toppings including lettuce, tomatoes, onions, black olives, sour cream, cheese.

Rice

Steamed baby carrots

Wednesday

Baked cheese ravioli

Wheat rolls

Salad

Thursday

Roasted Lemon Herb Chicken (using a whole chicken from HT .69/lb deal a couple weeks ago – they are also on sale for .67/lb at Food Lion this week through Tuesday, 2/26)

The recipe I am using is from AllRecipes.com. I am making some small changes to this recipe based on the comments including adding a quartered onion, 4 cloves of fresh garlic, fresh rosemary and the squeezed lemon halves to the cavity prior to roasting. I am also omitting the mustard powder and adding some chicken broth at the bottom for basting.

Saffron rice (free Mahatma rice at HT and Lowes Foods with .50/1 coupon doubled)

Roasted asparagus (using raincheck for $1.47/lb sale price from HT last week)

Friday

Breakfast for dinner!

Veggie omelets with choice of veggies including mushrooms, green peppers, onions, spinach, black olives, cheese

Croissants

Fruit salad (hoping for some good fruit sales at Aldi starting Wednesday)

Nakabi, my poor old brain doesn't retain info very well. Can you please tell me again your international store? I promise to try to remember this time. :)

Continued... do the same with pork or even steak like london broil. One night it's a hot meal, the next it's sliced cold and in salad, a third it's in clean-out-the fridge soup.

We still eat that way -- mostly from the freezer and pantry, that is, since we live so far out in the country and only get to the store once a week or so.

Final suggestion: check out the book "Desperation Dinners" by Beverly Mills and Alicia Ross. I read them more for inspiration and quick tips than for specific recipes, and found it very helpful. They also have two other books. Amazon has used ones for under $5 right now, but see if you can find it at the library first to see if you like it. It only took me 40 years to learn that tip! (library before purchase for cookbooks) LOL :)

Thanks, Nakabi. I was sorry I didn't get to meet all of you at Faye's class last week!I'll definitely save you some scones. Do you like caraway? I add lots of raisins and caraway in this recipe.

NCishome, I feel for you and remember those days when I didn't get home until 7:30 or later and had to pull dinner together. I tried to keep the pantry well stocked will things that go together fast and have quick defrost times. When you get home from the store, divide up packages of meat into individual serving portions and wrap separately. I recall having lots of pasta and sauteed veggie concoctions. You can eat it as is, or add shrimp, chicken, or pork. Do you have a grill? I made a lot of boneless grilled chicken. Throw the parts(ok if frozen) in a ziploc bag, add your fave marinade or BBQ sauce. I like EVOO, lemon juice, garlic, herbs. Put the bag in a bowl in case it leaks, and put in the fridge the night before or that morning. Make enough that you can have it a few nights.

Faye I will let you know how the Tilapia turns out. I have bought the stuffed ones from the seafood counters before, but I am trying it on my own this time.

NCishome - Sounds like you are ready to get back into some meal planning. With your busy schedule, having at least some of your meal prep done in advance will help you to eat at home much more often.

If you can batch cook some ingredients on the weekend (or whenever your days off might be) that would help. You can cook up a whole chicken or a few lbs of chicken breast and use it in various dishes all week & freeze some for later. Cook up a few lbs of ground beef and put in 1/2 lb or so meal portions into freezer bags to use when needed.

I sometimes make casseroles the night before so I just have to reheat in the microwave for dinner on our very busy nights (like the baked ravioli on the menu for Wednesday night.)

Any whole dishes you can cook in advance and freeze will also save you a ton of time (& trips through the drive through) each week.

Things like soup, chili & casseroles all freeze well. Baked chicken & beef stew freeze very well.

What are other meals you all freeze?

jdgoulas-as always, your menu sounds delicious! Make sure you save me some of those scones! Scones with some plum or marmalade jam are lovely!

nakabi or erinlikescoupons-we are always interested in trying new things-how do you cook millet?

Our menu this week-M-ham & scalloped potatoes, asparagus(love that raincheck!) T-red curry chicken, rice & stir-fry veggies W-crockpot beef stroganoff, egg noodles, green beans Th-hot dogs, mashed potatoes & saurkraut F-salmon & broccoli alfredo pasta & salad

Help me get back in the kitchen to cook and makeing meal plans!!!

Somehow with just the two of us and getting home later than normal 5pm. Fastfood take home has won the battle. Good to see that planning meals still work (we use to do that). Working at cooking ahead and planning.

thanks everyone.

You've just got to love that sensor, jdouglas!

floomamia - your crab stuffed tilapia sounds wonderful!

M- Garlic and herb pork tenderloin, Quinoa with garlic and olive oil, glazed carrots.

T- Crab stuffed tilapia, Baked potato, broccoli

W- Meatloaf, mashed potatoes, brussels spouts

T- Crab cake, french fries, cole slaw

F- Homemade pizza

I just had to share this, because the irony is really making me LOL. Those of you who know me will appreciate it.

I was trying to type the name of the soup, and the sensor got me. It is a popular Italian pasta-bean soup, spelled fa g iole. Oh, my...

Faye, anytime you turn on any kitchen appliance, it counts as cooking, and anything that lands on a plate counts as a recipe ;) Your chicken recipe sounds really good. There is something magical about putting garlic-lemons-fresh rosemary inside a chicken. Way more than the sum of its parts.

Nakabi, your DH is awesome for surprising you with your rosemary plant! M-Leftover chicken roll-ups (proscuitto, provolone, spinach) with mushroom sauce, rice, broccoli. Next time I'll swap spinach for roasted red peppers and omit the mushrooms. T-spaghetti with Italian sausage, Caesar salad, crusty rolls. W-Italian pasta, bean, and kale soup, rolls. That's all I've got :( But, I did create a new spreadsheet to log each night's menu, so at least I might have some ideas to fall back on in the future. And I'm planning to bake some Irish soda bread scones this week. Yum!

Mon-turkey chili with avocado crema, Tue-Indian spiced swordfish steaks (on sale @HT) and green beans, Wed-Lemony chickpea and zucchini stir fry with shrimp, Th-Leftovers, Fri-quiche lorraine

pss3-I see chipper answered your question.

lol @ Faye. I normally have a couple of meals planned in my head on Sundays for the following week but as far as writing it out, I've been horrible. I REALLY need to get back at it. The reason I really liked meal planning is bc my kids would look at the plan that was hung on the fridge every day to see what the next days meal would be. It kept the question of, "what are we having for dinner, mom" at bay. :)

Packy - you passed with flying colors!

careless - that still counts as dinner, even if I don't feel well enough to "cook", right??

LOL at Faye's "recipe"!

Packy - time to report in with at least 2 planned meals this week! Juanita and Nakabi will be checking your homework. LOL

In that case (lol), we're having chicken and rice tonight...

tomorrow we'll probably have french onion fried boneless chicken.. Just saw the recipie on Pinterest earlier... mashed potatoes and fresh corn.

:)

Nakabi - where is the Intl Store that you reference getting your salmon at...for that price, I need to get myself over there!

You can grow rosemary from spring cuttings of new growth. Cut piece about 4-6 inches, remove leaves from the bottom 2 inches. Insert 2 or 3 cuttings in a pot of new potting soil, moisten the soil, cover with plastic and put in a lighted area. Occasionally uncover and mist the stem. In 2-3 weeks, you should see new growth. When you see new growth, you can remove the cover. You can transplant into larger pots or outside in another 2-3 weeks (weather permitting). Rosemary does not like a lot of water.

I guess I should have given a little more info on the crispy honey chicken. My complex and highly time consuming recipe involves opening a bag of Kahiki Crispy Honey Chicken (on sale a couple weeks ago at Lowes Foods with .75/1 coupon), baking them on a pan and pouring the sauce that comes in the package over them. It's hard work, but someone has to do it! LOL

I have a cold and could not picture any real cooking for anyone tonight so this is perfect.

pss3 - it does not have 1,000,000 calories thankfully.

I think I'll use cooked frozen chicken I already have in the freezer for the tacos tomorrow.

Congratulations on your giant rosemary bush! Sounds like you need to plant it outside before it takes over your kitchen! Our rosemary bushes in the front yard are also huge which is good because we love fresh rosemary!

Packy - time to report in with at least 2 planned meals this week! Juanita and Nakabi will be checking your homework. LOL

Thanks for sharing your meals everyone!!

Nakabi do you know if I can separate rosemary? I have one plant from last year that is huge and totally over taken my herb garden. I love rosemary and definitely don't want to kill it but I don't have any room to grow anything else!

Faye, I'm also curious about your crispy honey chicken? Makes me think of PF Chang's wonderful but 1,000,000 calorie crispy honey chicken....yum

Our meals:

Monday: Fresh Take Chicken-southwest flavor, mashed potatoes, lemon-garlic broccoli.

Tuesday: Butterball turkey burgers, sweet potato fries.

Wednesday: Cheese ravioli, salad, garlic bread.

Thursday: free pizza from Papa John's

Friday: Macaroni and cheese casserole with hot dogs, green beans.

Faye-your roasted lemon chicken sounds pretty tasty!

erinlikescoupons-I see you are a fellow millet lover! We eat millet back home a lot and I don't see too many Americans eating it..mmmm

M-Grilled salmon (always cheapest at Intl store for $2.50/lb), roasted red potatoes w/rosemary, Caesar salad T-Lentil soup, wholewheat rolls W-Mojaras (Mexican fried tilapia), sofrito rice, salad, homemade tortillas Th-Beef tajine, baguette F-Homemade pizza using homemade pizza dough, bacon, spinach, leeks, onions, mushrooms, and lots of fresh rosemary.

Speaking of rosemary-My poor rosemary bush got overplanted accidently a month or 2 ago so I haven't had fresh rosemary since :( Hubby surprised me and got me a rosemary bush for Valentines day. It's HUGE! taller than my 3 year old son and GIGNANTIC ALL AROUND! Seriously, every time I see it in my kitchen, I think a Christmas tree is growing lol...

I have GOT to get better about doing this again. :( I've not prepared a meal plan in months.

I baked a whole chicken lastnight (from HT a few weeks ago) so it will make several appearances this week. No plan set in stone but chicken tacos sound pretty good. And maybe chicken scampi with pasta.

What is crispy honey chicken?? Sounds good!

M - Wild caught cod from HT. Salad (EB Farms $2.00 for clamshell of organic spinach - on sale for $3.50 plus $0.75 coupon). Millet with spices. (Millet is cheap at Harmony Food Store in the bulk bin.)

T - Pasta with chicken sausage (Mueller's hidden veggie $0.70 with coupon, Johnsonville chicken sausage $0.90.) Throwing in some veggies, sauce.

W - Homemade pizza (cheap dough at HT, cheap cheese at HT, cheap pepperoni at Dollar Tree, cheap mushrooms at Aldi)

Th - Chicken breasts, spinach salad.

F - Twongo restaurant deal.

Sat - Vegetarian chili and making homemade soft pretzels.

Sun - Crockpot meal with leftover veggies, whatever meat I pull out of the freezer this week, wild rice, and lentils.
