Not sure how this week will play out since my dad is having surgery Monday (not major surgery) so I am keeping meals simple for the first part of the week. If I am not back for dinner each night – hubby and the kids can handle grilled cheese and homemade pizza!
What's on your menu for the week or even just dinner tonight?

Homemade veggie pizza using wheat crust dough ball from Harris Teeter
Steamed carrots
Apple slices
Tuesday
Grilled cheese sandwiches
Pasta salad (with tomatoes, onions, mushrooms, green peppers and black olives with light mayo and pasta salad seasoning from McCormick)
Broccoli
Wednesday
Baked tilapia
Wild rice
Sauteed zucchini, squash and onions
Thursday
Chicken tacos using Italian chicken cooked in the slow cooker
Spanish rice
Tomato and cucumber salad
Friday
Baked light cheese ravioli (used a rain check from HT for Celentano ravioli)
Salad

4 oz egg noodles, 1 can Campbells Cream of Shrimp Soup, 3/4 cup milk, 1/2 cup Mayo, 1/4 cup celery (I use chopped drained waterchestnuts instead), 1 T chopped onion, 1/4 t salt, 1/3 cup cheddar cheese (I use more), 1 cup shrimp (I cut large shrimp into 3 piece), and 1/4 cup Chow Mein Noddles.
Other notes: I normally make a double or triple batch. I also freeze serving size containers. You have to be careful how you reheat it. If you can reheat on the stove, heat it until it is hot. If you try to reheat it in a microwave, heat it just enough to knock the chill off and come to room temp. Otherwise everyone around you has to smell it and the shrimp will be tough.
Cook the egg noodles. Cook the shrimp (I saute them with some ground black and red pepper). Mix everything except Chow Mein noddles together and bake at 350 degrees for 30 to 35 minutes. Pull it out and top with chow mein noodles. Bake for 8 to 10 minutes longer and noddles are toasted.
