Monday meal plan: Tilapia & tacos & tomatoes, oh my!

Not sure how this week will play out since my dad is having surgery Monday (not major surgery) so I am keeping meals simple for the first part of the week. If I am not back for dinner each night – hubby and the kids can handle grilled cheese and homemade pizza!

What's on your menu for the week or even just dinner tonight?


Homemade veggie pizza using wheat crust dough ball from Harris Teeter

Steamed carrots

Apple slices


Grilled cheese sandwiches

Pasta salad (with tomatoes, onions, mushrooms, green peppers and black olives with light mayo and pasta salad seasoning from McCormick)



Baked tilapia

Wild rice

Sauteed zucchini, squash and onions


Chicken tacos using Italian chicken cooked in the slow cooker

Spanish rice

Tomato and cucumber salad



Baked light cheese ravioli (used a rain check from HT for Celentano ravioli)

    jdouglas13, if you have trouble finding the Campbells Cream of Shrimp soup, look for it at HT. The HT in Alexandria, VA, is where I normally get mine and stock up a few cans when I am working up there. My Kroger in Cary doesn't sell it and I just don't think about going to one of the HTs in Cary because they aren't that close to me.

    Tell your DW I wish her a belated Happy Birthday.

    ascherer, thanks so much for your recipe for the shrimp casserole! Sounds yummy, and I'm looking forward to trying it! I also appreciate your hints for reheating.

    Jdouglas13 - Enjoy

    4 oz egg noodles, 1 can Campbells Cream of Shrimp Soup, 3/4 cup milk, 1/2 cup Mayo, 1/4 cup celery (I use chopped drained waterchestnuts instead), 1 T chopped onion, 1/4 t salt, 1/3 cup cheddar cheese (I use more), 1 cup shrimp (I cut large shrimp into 3 piece), and 1/4 cup Chow Mein Noddles.

    Other notes: I normally make a double or triple batch. I also freeze serving size containers. You have to be careful how you reheat it. If you can reheat on the stove, heat it until it is hot. If you try to reheat it in a microwave, heat it just enough to knock the chill off and come to room temp. Otherwise everyone around you has to smell it and the shrimp will be tough.

    Cook the egg noodles. Cook the shrimp (I saute them with some ground black and red pepper). Mix everything except Chow Mein noddles together and bake at 350 degrees for 30 to 35 minutes. Pull it out and top with chow mein noodles. Bake for 8 to 10 minutes longer and noddles are toasted.

    ascherer, I truly feel for you with the long hours. I did that for too long with a 2 hour R/T commute and an 11 hour workday with no break for lunch. We were lucky anything made it on the table for dinner most nights.

    Your double shrimp casserole sounds really good! Would you mind sharing the recipe?

    M-stouffer's lasagna (on sale at LF a couple weeks back), T-Tacos, Wed-smithfield sausage (on sale and purchased for $1.99 with Q) and potatoes, Th-leftovers, F-Pizza, Sat-BBQ chicken, salad, B. potatoe, Sunday-burgers and dogs.

    I'm working really long hours right now so we eat off everything I cooked over the weekend, have in the freezer, or is quick and easy. M - Double shrimp casserole and salad. T - Beef stroganoff and a veggie of some sort from the freezer W - homemade chili TT - Breakfast for dinner F - haven't figured that one out yet maybe pizza.

    M - pork tenderloin, sweet potato fries, broccoli Tu - chicken stir fry w/ broccoli, mushrooms, onions, zucchini and white or brown rice depending which one of us it is :) W- Some sort of Mexican style chicken w/ beans and HT whole grain tortillas, Th - Dreamfields pasta w/ ground turkey and tomato / mushroom sauce...we'll see if all that comes to pass! :)
