What meals are you planning for the week? We are having chicken alfredo, teriyaki tofu and veggies, omelets and turkey bacon, veggie chicken sandwiches and more!


Meatless Monday!

Veggie chicken sandwiches on honey wheat bread with lettuce, tomatoes, onions, bread & butter pickles, light mayo and cheese. (Used $1.50/1 Morningstar veggie burger coupon doubled at HT on Sunday. Coupon printed from Kelloggsfamilyrewards.com when you cash in 1000 points)

I am also making banana bread tonight so I am guessing that everyone will want some for dessert. The kids love taking it to school in their lunches and it’s so easy to make.You can find the recipe I use in the WRAL Recipe Database link in the box above. Just search for Banana Bread.

Pizza night using an HT wheat crust and pasta sauce from the Classico deal at HT this week.



Teriyaki tofu and vegetables




Chicken Alfredo with rotini pasta (using light Classico alfredo pasta sauce from HT deal and Dreamfields pasta from HT Super Doubles and $1.97/lb chicken breast that was on sale at Lowes Foods a couple weeks ago)

    Sale alert on chicken for all these chicken pot pies: HT will have whole chickens on sale for $0.69/lb starting on Wednesday. Perfect for poaching with carrot, onion, celery, garlic, and making wonderful homemade broth for soups, gravy, etc.

    ascherer - you can freeze the cooked chicken in meal portions and then use as needed in recipes.

    After all these chicken pot pie recipes, I may have to have it next week.

    Something was in the air this weekend. Lots of info on chicken pot pies on this thread.

    M: Homemade chicken pot pie T: Homemade chicken salad with grapes and toasted almonds W:Breakfast for dinner (eggs w/cheese, bacon, toast or omelets) TT: Maybe chicken tacos with all the fixings or leftovers F: DH has a man's function and I am on my own (woo hoo!)

    Side note: DH bought 3 lbs of boneless/skinless chicken breast at Sam's and I made the mistake of baking them all at the same time. I think we are going to start clucking any time soon.

    We made our first chicken pot pie from scratch on Saturday with a top & bottom crust and had it way too thick. Tried it again today with only the top crust and it was much better. I cheated and use Pillsbury crust. Also some canned veggies (corn, peas, & mushrooms) with the fresh ones but the rest starts with a homemade rue with butter and flour then white wine, half & half, chicken stock added. I want to try adding some water chestnuts next time.

    While I am on a pie baking run, I think we will have cheeseburger pie one night also. It also reheats well in the microwave for leftovers. Saute onions and peppers in a skillet, take that out and brown the hamburger, add seasoning (I use worchester sauce, salt and pepper) and the onions and peppers. Remove from heat and mix in shredded cheddar. Put in pie crust and top with another crust. Bake til golden. My boys top it with ketchup.

    I used to do cupcake size all the time but my little guys are now 18 and 20. They do make little foil ones also (I use those when I am making little pies for friends so they don't have to return the pan).

    Jiffy makes a pie crust mix you just mix with water, it is under a dollar for two crusts.

    Another easy thing for breakfast in cup cake pans is to line them with Pillsbury grands jr., added some pre cooked bacon or sausage to the "well". Pour in some beaten eggs mixed with a little milk. Top with shredded cheddar. Bake, not only do they taste wonderful but they reheat/freeze really well.

    Scoutmom, what a great idea to use the little pie pans. And thanks for taking the time to give us your recipe! :) For some reason, all I could think of was ramakins, and the ones I have are too small. I wonder if I could find small aluminum foil pie pans, and then just put them on a half-sheet pan to bake. Very cute idea to do them in cupcake pans for your little guys.

    Nakabi,I was surprised that you brushed the crust with evoo. I would have thought milk, cream, or a beaten egg? I like your idea of deconstructing and then putting the WM crust back together for your own shape. Every once in a great while I make pie crust, in quantity because it makes such a mess, roll it out and put it into foil pie pans, and freeze them. I haven't done it in a while though. I always end up looking like the Pillsbury dough boy covered in flour from head to toe. LOL

    I use little pie pans. Last nice I braised the chicken in a big pot til the skin was nice and brown. I took out the chicken and sauteed some onions and celery in the pot. Then I added a little cooking white wine to get all the flavor off the bottom. Re-added the chicken and covered in broth to finish cooking. So we had some chicken, broccoli with cheese sauce and rice. Then tonight I cut up the chicken, broccoli, and put it and the broth in a big pot, added a can of corn and a can of peas. While that simmered I make the crust and lined all the pie pans. Then I got some hot water (it has to be hot or you will get lumps) and mixes in some flour. I added that mixture to the pot to thicken the broth to what we like, adding salt and pepper to taste. Then I ladled it into the pie crust, added the tops and baked them. They were a huge hit with my boys. For little ones you could do them in cupcake pans. I had enough of the filling left for soup for me for lunch and two pies left for the boys.

    scoutmomof2-I had the same question as jdouglas re:your chicken pot pie :)
    jdouglas-the one time I made individual pot pies, I used the frozen WM pie crust (the 2 times a year I go to WM and I bought them then lol), break up the crust and place it in a ramakin and press firmly to make my own crust in it. add your chicken & veg, and top with more crust. press firmly and brush with evoo. it turned out nice, but I'm always looking for new ways to make it :)

    Scoutmom, I meant to ask what kind of baking dish do you make your individual pot pies in? Or do you make the crust separately?
