Monday meal plan: What's on your menu?

What meals are you planning for the week? We are having chicken alfredo, teriyaki tofu and veggies, omelets and turkey bacon, veggie chicken sandwiches and more!

 

Meatless Monday!

Veggie chicken sandwiches on honey wheat bread with lettuce, tomatoes, onions, bread & butter pickles, light mayo and cheese. (Used $1.50/1 Morningstar veggie burger coupon doubled at HT on Sunday. Coupon printed from Kelloggsfamilyrewards.com when you cash in 1000 points)

I am also making banana bread tonight so I am guessing that everyone will want some for dessert. The kids love taking it to school in their lunches and it’s so easy to make.You can find the recipe I use in the WRAL Recipe Database link in the box above. Just search for Banana Bread.

We are having dump soup today. I keep a gallon bag in the freezer for all leftover veggies/meats/beans. It got full yesterday, so I started the soup in the slowcooker this morning. Tues: grilled cheese w/leftover soup Weds: beef brisket, BBQ slaw and roasted postatoes, Thurs: turkey pie and green peas Fri: make your own grilled pizza Sat: salmon patties, baked beans, and fruit salad Sun: roast with lots of roasted veggies

M-leftover slow cooker chix & gravy (really easy: chix breasts, mushrooms, one can of Cream of Mushroom w/Garlic, one can of Cream of Chix w/Herbs. easiest recipe ever!), T-pizza night from local place $5 for 2 lg pizzas thru our complex, W-pork cutlets w/mashed potatoes & gravy, R-breakfast for dinner (eggs or pancakes..not sure yet), F-something pasta-y, haven't gotten that far yet.

Only have today's so far. Roasted Italian sausage, salad, and cauliflower topped with bread crumbs, garlic, parm, evoo and run under the broiler ever so quickly just to brown.

The best part will be dessert. I made my "2009 Pneumonia Shortbread", so called because I made with when I had pneumonia, but was dying for something sweet. It was so easy, it took no effort even as sick as I was. It is a basic Scottish shortbread, but done in the stand mixer, made with butter, 10X sugar, flour, salt. The twist is I top it with demera sugar before baking. YUM!! :)

this week for dinner? Beef bourguignon in the slow cooker, vegetarian black bean soup with avocado and sour cream, orange salmon and quinoa, leftovers, and spinach feta omeletts for dinner

kat - I think we may have to have spinach and feta omelets as well. Thanks for the idea.

mon- gortons fish, mac & cheese, some frozen veggy from the bottom of my freezer

tue- working hubby on his own (which proably means special K ceral) wed-working (same as tuesday) thurs - turkey sausage jumbalya, rice fri- might attempt to cook something w/ tofu I have in the freezer. Does any one know if the texture changes by being in the freezer?

Since we have leftover chicken (which I braised and then put in a good stock, so we have stock with onions and stuff to make into gravey) and brocoli, I told the boys I would make chicken pot pie with the leftovers for tonight (which since I make individual sizes will probably be lunch tomorrow for me too). My youngest has asked that I make the swedish mealballs again that we had last week so we will probably do that (I think he just likes the Sister Schuberts Hawaiian rolls).I am not sure what else yet.
