Updated: 2012-12-24 10:00:12

This week on the meal plan we have turkey breast, creamy mushroom chicken and raspberry cheesecake!

Monday

Turkey

Sweet potato casserole

Salad

Pumpkin cookies with cream cheese icing

Tuesday – Merry Christmas!

Eating (too much) with family – I’m bringing Raspberry Cheesecake

Wednesday/Thursday

We are taking my mother-in-law out for dinner either Wednesday or Thursday

Leftover turkey breast and sweet potato casserole

Friday

Creamy baked mushroom chicken served on pasta with a side of steamed broccoli

The basic recipe I use can be found on the Campbell’s website and the recipe is called Creamy Chicken Bake. I do make some modifications to this recipe.

Modifications: I usually use a can of non-condensed creamy mushroom soup from Progresso instead of the Campbell’s condensed soup. The Progresso Meal Starters Portabella sauce also works well with this. To the soup mixture, I also add about ¼ cup of light sour cream. I also add sautéed onions and 8 oz. fresh mushrooms to the sauce. Finally, I add pepper to spice it up a little.

Merry Christmas, all! Nakabi, yes, yorkshire pudding from scratch. It's been forever since I had it. My sister was going to make it, but I didn't realize until dinner was on the table that she had changed her mind, so no YP tonight :( I'll make some when I get back home. Sometimes I make toad in the hole too. Have you had that? (Sausage baked into yorkshire pudding).

Wonderful tip on rooting rosemary! I didn't know it rooted so easily. I was going to suggest going to the guy who sells herbs at the NC State Farmers Market.

nakabi, rosemary grows beautifully from cuttings. If you have one, or know someone with one, get a cutting, plop it in some good potting soil and keep it well watered. It should grow roots soon enough.

M-hubby's request, stuffed shells, T-whatever my Ex's Mom is making, lasagna and turkey I think, W-road food and whatever my Mom is making, Th-Mom again, F-road food and whatever my FIL is serving (usually take-out), S&S FIL's special again (there'll be a restaurant visit in there, and then more take out unless they let me cook them dinner again this visit, which they should since we're bringing down some smoke pork chops from Mae Farms at the Farmers Market).

jdouglas-do you make your own yorkshire pudding? Sounds like you know how to do an actual Sunday roast like we do back home :) M-Bacon/spinach/leek quiche, homemade basil/tomato soup, french bread T-HAPPY CHRISTMAS!!! Steamed prawns (lots of old bay seasoning!!!), homemade sweet potato chips, broccoli, yams, rolls W-Prawn curry, basmati rice, saag paneer Th-No idea F-Spinach/tomato/rosemary/bacon/ homemade pizza using the dough from HT (requested by my 3 year old son)..

For those of you who use fresh rosemary, do you know where I can get some more? I'm wanting to grow another bush..thanks

M-Ham, asparagus, sweet potato casserole; T-prime rib and gravy, mashed potatoes, yorkshire pudding, asparagus, and birthday cake in honor of my Mom's 80th; W-leftover ham with mac & cheese and salad; TH-leftover prime rib with gnocchi and a veg medley; F-back home and frugal cooking! Probably mac & cheese and broccoli.

M-Chicken strips, mac 'n cheese; T-Eating with the family - Turkey w/all the trimmings; W-Leftover turkey; TH-Roast w/rice; F-Still working on this one.
