I'm an old fashioned kinda girl...I like skin AND bones on my fried chicken!!! lol

Nakabi, we are some chicken eatin' folks at my homestead. I'm not big on pork chops or even steak these days. I will eat them both but not "longing" for either.

I would've bought MORE than 4 if I would've had the room. My freezers are packed full yet again!

Also, I used the soft drink box tip for storage of my canned goods. IDK how long it will hold up but for now it's working like a charm. I had two boxes each of corn and green beans. I had some green beans I couldn't put in a box and I just wasn't about to mess with another box of veggies. My pantry looks WONDERFUL!!!! I can open the pantry door and it's like the heavens open wide it looks soooo good!

jdouglas-you are more than welkom to come over for supper anytime! there is always plenty! have you ever had tajine? thanks for the info on the chicken..I would also do bonesless/skinless to try and cut out some of the fat. Faye-I'll be there at 6:30 :)

jdouglas - while you are house-hopping, since I know how much you like tofu (LOL), we'll see you around 6:30 tonight. ;-)

nakabi, meant to say that when I make fried chicken, it is usually skinless and boneless, so it cooks pretty fast. Not traditional, just my own preference.

jdgoulas-thanks for the fried chicken tip; I may just have to try it sometime.perhaps next week :) packy-I bought 4 of them as well..couldn't pass up the great deal, but like carelesswhisper said, we just might start clucking as well lol

nakabi, you are such a good cook, fried chicken will be easy for you. For a Yankee, my fried chicken is pretty good. Basically, you want to soak it in well-seasoned buttermilk overnight, drain and dredge in well-seasoned flour, and deep fry in vegetable or peanut oil (medium-low heat) until brown and cooked through. For seasoning, I use garlic powder, black pepper, cayenne pepper, and poultry seasoning (McCormicks) or, preferably Northwoods Seasoning blend from Penzeys Spices.

No menu yet, hopefully I'll come up with some ideas later. It may well include chicken in some form, since I bought, broke down, and froze 4 over the weekend.

I actually bought 4 of the chickens. We grilled one last night (beer can chicken) and the others I froze. I actually went ahead and cleaned and seasoned them so I can put them in the crockpot half frozen and they won't overcook before we can get home to eat them.

I baked a whole chicken yesterday that I got from HT. We will have it again tonight. I will make quesadillas with the remainder later this week.

We might grow feathers and start to cluck by then!

Yes, there is a whole lot of chicken going on.

Thanks for sharing everyone! I forgot about the 2 chickens I bought last week from HT for .69/lb. I think we'll have one this coming weekend. Thanks for the reminder kat. :-)

nakabi - It is delicious with a sourdough...but anything that gets cripsy under the weight of a cast iron pan will work beautifully.

nakabi, yes I do fry my own chicken. In a cast iron skillet with oil. I do not do it often since it is not the healthiest but do every once in a while. The key is to eat is with no leftovers, it doesn't reheat well. There are some good recipes and tutorials over at allrecipes.com.

kat08858-your fig jam w/brie grilled cheese sounds good! what kind of bread will you use? scoutmom-d you make your own fried chicken? that is one thing I have never tried to make, but would love to learn how to make..hubby is American from TN and occasionally wants fried chicken, but this Ugandan knows not how to make it lol... M-chicken tajine (thanks to awesome chicken deal at HT!), bagueete T-Chicken & pineapple quesadillas, pinto beans, sofrita rice W-Grilled venison loan wrapped in bacon, baked sweet potatoes, walnut green beans, steamed broccoli Th-Grilled cr*ppie (fish), edamame salad, Israeli couscous F-Roast chicken (very simlilar to kat08), roasted herbed red potatoes, spinach/strawberry/blueberry salad

Tonight is tacos, tomorrow night I think we will do a ham and cheese pie (really not a pie, its a breakfast dish using ham, cheese, green pepper, onion, eggs, milk and bisquick). Wednesday is fried chicken with cheese biscuits and veggies. Haven't figured out Thursday and Friday yet, although grilled cheese does sound good if I can get to Trader Joe's (they have a wonderful English cheddar with caramelized onions).
