M: A cute little roast chicken (on sale this week @HT) stuffed with herbs and lemon, roasted butternut squash, salad T: Sausage and vodka sauce penne W: Tilapia and green beans Th: Leftovers F: Veg. soup and fig jam/ brie grilled cheese (a favorite of mine)

Tonight is tacos, tomorrow night I think we will do a ham and cheese pie (really not a pie, its a breakfast dish using ham, cheese, green pepper, onion, eggs, milk and bisquick). Wednesday is fried chicken with cheese biscuits and veggies. Haven't figured out Thursday and Friday yet, although grilled cheese does sound good if I can get to Trader Joe's (they have a wonderful English cheddar with caramelized onions).

kat08858-your fig jam w/brie grilled cheese sounds good! what kind of bread will you use? scoutmom-d you make your own fried chicken? that is one thing I have never tried to make, but would love to learn how to make..hubby is American from TN and occasionally wants fried chicken, but this Ugandan knows not how to make it lol... M-chicken tajine (thanks to awesome chicken deal at HT!), bagueete T-Chicken & pineapple quesadillas, pinto beans, sofrita rice W-Grilled venison loan wrapped in bacon, baked sweet potatoes, walnut green beans, steamed broccoli Th-Grilled cr*ppie (fish), edamame salad, Israeli couscous F-Roast chicken (very simlilar to kat08), roasted herbed red potatoes, spinach/strawberry/blueberry salad

nakabi, yes I do fry my own chicken. In a cast iron skillet with oil. I do not do it often since it is not the healthiest but do every once in a while. The key is to eat is with no leftovers, it doesn't reheat well. There are some good recipes and tutorials over at allrecipes.com.

nakabi - It is delicious with a sourdough...but anything that gets cripsy under the weight of a cast iron pan will work beautifully.

Thanks for sharing everyone! I forgot about the 2 chickens I bought last week from HT for .69/lb. I think we'll have one this coming weekend. Thanks for the reminder kat. :-)

Yes, there is a whole lot of chicken going on.

I baked a whole chicken yesterday that I got from HT. We will have it again tonight. I will make quesadillas with the remainder later this week.

We might grow feathers and start to cluck by then!

I actually bought 4 of the chickens. We grilled one last night (beer can chicken) and the others I froze. I actually went ahead and cleaned and seasoned them so I can put them in the crockpot half frozen and they won't overcook before we can get home to eat them.
