Sounds like we need a page to post all of our "What I Did With My HT Chicken" meals! :-) I got two and one was oven roasted last night. The other will be going into matzoh ball soup this Friday!

Faye, it is not much but might help a few people to go out for a night a little cheaper.

Sorry I am posting so late but things happen. DH had a meeting tonight and another one tomorrow.

M: Ate out T: I am thinking ham, swiss, feta and veggie omelet W: I am sneak a homemade tuna casserole in before Lent starts mid-February TT: Hamburgers with all the veggies and tater tots F: whatever DH would like for me to cook for him.

Faye: On a side note. You may want to checkout Abbey Road Tavern and Grills home page on Facebook. 919-481-4434 if you need to call. They have a $2 off entrees and $1 off appetizers special now. I can't find it on their webpage right now but I know you can always find it if you connect to the wireless network while you are on site.

After all that, tofu won't phase you at all.

Faye and nakabi, thanks for the invites, especially since I invited myself! LOL

Faye, it is my lovely DW who would probably rather eat sticks than tofu. I've never had it, but am a WAY more adventurous eater than she is, and I've been thinking about trying it! You and I will have to have a conversation one of these days to discuss tofu 101 :)

Did I ever tell you about some of what I ate as a kid? My Mom just had 'special' names. Like special tuna (smoked chubs), special bologna (tongue), special sausage (blood pudding), and special pork chops (veal chops with kidneys). A little tofu doesn't scare me! ;)

We also got 4 chickens at HT this weekend-We froze #1, cooked & froze the meat from #2&#3 for casseroles, pot pie, etc, and we are having oven roasted chicken and root vegetables with #4 tonight,Rest of the week: Tues-Asian marinated talapia, brown rice & stir fry sesame cabbage, Wed-cheese burgers, sweet potato fries & broccoli, Thur-spicy chicken pasta and salad, Fri-home-made pizza. My family wishes I would fry the chicken but I don't fry- it never turns out right for me-I must get the oil too hot or not hot enough or something. The Cooking Light oven fried chicken is as close as we get at our house.

m- tomato soup and grilled cheese t- veggie lasagna, salad w- tuna caserole, broccoli, cauliflower t- spinach spaghetti, salad, garlic knots f- homemade pizza

I must agree with Packy. If I am going to eat fried chicken it has to with skin and bones. It is so good but I'm not one to fry chicken so I only get it on occasion.

funny story. We're looking at houses and the two that we looked at this weekend all I could think about is "where am I going to put my freezer"...and "is this pantry big enough"....and "where am I going to put my overflow stockpile cabinet". Yep, true story.
