Homemade veggie pizza using HT dough ball (recipe is in the WRAL recipe database link in the box above - search "pizza crust using dough ball")

Ever thought about incorporating Meatless Mondays as part of your weekly menu? You always have several vegetarian meals included throughout the week so it would be easy to intentionally use list of those meals on Mondays! Going meatless on Monday is great for your health, the environment, animal welfare and often your pocketbook (not only through cheaper food but also cheaper health care). Get more details on our local campaign at trianglemm.com. Thanks!!!

genialynn-try getting the dough to room temperature before rolling it out. cold dough tends to have my elasticity than room/warm dough so it will pull back more :) I take my dough out the night before and let it thaw over night in the fridge. I then take it out of the fridge about an hour before I'm going to make the pizza to let it warm up.

I have the hardest time rolling mine out. It just doesn't want to spread out!! I put it in the fridge that morning and it is 99% thawed, it just doesn't want to get flat. Any ideas?
