Monday meal plan: Shrimp, chicken, tofu and more!

On the menu this week we have shrimp and pasta, toasted sesame tofu, Italian slow cooker chicken, veggie pizzas, chicken enchiladas and more! What's on your menu for the week or even just tonight?

 

 

Monday

Shrimp Voila (from deal a couple weeks ago)

Pillsbury crescent rolls

Salad


Tuesday

Toasted sesame tofu and stir fry veggies (using the free Campbell’s skillet sauce)

Brown rice

Tangerine slices


Wednesday

Homemade veggie pizza using HT dough ball (recipe is in the WRAL recipe database link in the box above - search "pizza crust using dough ball")

Side of spaghetti

Salad


Thursday

Italian slow cooker chicken (I am cooking the whole value pack of chicken breast and then using ½ of the chicken for chicken enchiladas on Friday)

Sweet potatoes

Broccoli


Friday

Chicken enchiladas

Rice

Corn

Fruit (depends on what goes on sale starting Wednesday)

    Ever thought about incorporating Meatless Mondays as part of your weekly menu? You always have several vegetarian meals included throughout the week so it would be easy to intentionally use list of those meals on Mondays! Going meatless on Monday is great for your health, the environment, animal welfare and often your pocketbook (not only through cheaper food but also cheaper health care).     Mon: fish tacos Tues: Veggie Hot dogs with leftover homemade chili from Sunday Wed: Chix Tikka Masala, green beans and naan Thurs: Spaghetti, Meatballs and Sauce Fri: leek and onion quiche

    Eating out for a birthday tonight but for the rest of the week...

    Tuesday:
    Tilapia, (Mrs Pauls Parchment bake on sale 3.99 Food Lion)
    garlic roasted asparagus,
    glazed carrots (1 pound bag baby carrots on sale 1.29 Food Lion)

    Wednesday:
    Spinach Spaghetti with sauce

    Thursday:
    Italian chicken,
    homemade mashed potatoes, (5 pound bag on sale 2 for $5 at Food Lion) broccoli (broccoli crowns on sale 1.69 pound at Food Lion

    Friday: Veggie burgers fries (Ore-Ida fries on sales 5 for $10 at Food Lion)

    Faye-your tofu and veggies sound delicious! My husband will eat everything, BUT tofu :(
    M-Slow cooker beef tips, mashed potatoes, green beans, pineapple (courtesy of pricematching at Target for .99 yay! I bought 8 of them lol)
    T-Salmon cakes, leftover mashed potatoes, 4 bean salad, fruit salad
    W-Periperi chicken (similar to Nando's), chips, broccoli, slow cooker baked apples
    Th-Red lentil soup, wholewheat yeast rolls
    F-Leftovers

    genialynn-try getting the dough to room temperature before rolling it out. cold dough tends to have my elasticity than room/warm dough so it will pull back more :) I take my dough out the night before and let it thaw over night in the fridge. I then take it out of the fridge about an hour before I'm going to make the pizza to let it warm up.

    Tonight: Homemade vegetable beef soup w/peanut butter & jelly sandwiches; Tues: Digiorno spinach, cheese & garlic pizza; Weds: Taking my husband out to eat for his birthday; Thurs & Fri: Not sure yet.

    I have the hardest time rolling mine out. It just doesn't want to spread out!! I put it in the fridge that morning and it is 99% thawed, it just doesn't want to get flat. Any ideas?

    Found a good article last week on Yahoo with ideas for using pizza dough. Now it needs to go on sale again
