Monday meal plan: Salmon, bbq chicken, French toast and more!

This week on the menu, we have salmon, bbq chicken, French toast, chicken tacos and more! I've also included a recipe for some delicious and very easy cinnamon buns I made on Saturday.

French toast (using the Pepperidge Farm cinnamon raisin bread that is BOGO through 12/4)

Simply Super Crescent Cinnamon Rolls

On Saturday, I made some cinnamon rolls using Pillsbury crescent dough and everyone loved them! They were super easy to make and really quite tasty.  As you can see in the picture above, they look pretty tasty as well!

Basically, you just roll out 1/2 the crescent dough, top it with the sugar, butter and nuts (I used walnuts), then top it with the other half of the dough. Then cut into long strips, twist them and then coil them and then bake. The twisting part is a little messy, but it's worth it!

I cut the sugar down to 1/2 cup total, cut the butter by about a tablespoon and used 1/2 cup of walnuts instead of 2/3 cup.  Even with less of everything, they were still very buttery and sweet. I may cut the sugar and butter down even more the next time I make them. They are not a very healthy treat so I won't be making these every week.  But they sure hit the spot on Saturday!

I love using pillsbury breads for recipes! I made the best bread sticks using the pizza dough last week...they were almost as good as Olive Garden!

Our meals this week are a little lighter this week as both DH and I gained a pound or two over Thanksgiving and we want to lose it before all the Christmas goodies turn 2lbs into 10lbs.

Monday: Salad with organic greens topped with broiled chicken.

Tuesday: Baked sweet potatoes, chicken sausages, and broccoli.

Wednesday: Flat bread pizza, salad.

Thursday: Garlic skillet shrimp over rice, stir fry veggies.

Friday: Soup with grilled cheese sandwiches.

M: Chix tacos, homemade guacomole, refried beans T: Tofu stir fry W: Black bean burgers and green beans Thurs: pasta with sauce and broccoli Friday: homemade pizza.

Faye, I don't know if there is a way for WRAL to fix the smartphone apps but you can't read the comment section from smartphones/tablets.

M-Spicy turkey chili, T- Feta and spinach stuffed chicken cutlets, broccoli, W-veg. rissotto, Th-leftovers baby, F-turkey keilbasa and beaised red cabbage with currants

Monday: Homemade butternut squash soup, homemade bread



Tuesday: Homemade Chicken and Dumplings,Salad



Wednesday: Sausage with peppers and onions, zucchini, baked acorn Squash



Thursday: Spinach Spaghetti with soy meatballs



Friday: Baked tilapia, carrots, broccoli

Yay for meatless Monday!! Thanks Faye. We can all improve our health (+ reduce our medical bills) and significantly reduce our carbon footprint (at a much lower cost than buying a Prius!) by substituting plant-based foods for meat and dairy.

In no particular order:

- egg salad sandwiches on homemade bread

- steak, salad, garlic bread

- veggie/beef/barley soup

- burgers, broccoli, and "junk food pasta" - my homemade knockoff version of the old Noodle Roni Noodles Romanoff

- some kind of pasta concoction with kale (got a huge bunch at FL for $1). I'm thinking either carbonara which is bacon and egg or scampi with some shimp I have in the freezer.

- lasagna?? I have everything in the house to make it after last weeks discussion, the sale/coupon for ricotta at HT, and HT brand shredded cheese BOGO. Barilla no-boil lasagna noodles were also on sale at HT 3/$5.

Faye, those cinnamon rolls sound awesome, and it was all I could do to ignore the cans of crescent rolls at HT this afternoon. Gotta save room for the napoleons I made yesterday hahahahaha ;)

I had a lady tell me the HT fresh dough is wonderful to make cinnamon rolls with. Roll out dough, spread melted butter on, sprinkle sugar and cinnamon. Roll up dough and slice in in 2 inch rolls. Bake and delicious!

alicepahl, that is a great idea... basically, pizza dough = bread dough = cinnamon roll dough. Very cool!

alicepahl - that sounds sooooo easy and tasty! I am trying that next time. Thanks for the idea!

Thanks to everyone for sharing your menus this week. I had planned to put lasagna on the menu (after the chat we had about it last week, as jdouglas mentioned) but I am waiting until it gets a little cooler again.

jdouglas - napoleons are a good substitute for cinnamon buns. :-)

kat - your Feta and spinach stuffed chicken cutlets sounds great!
