Monday meal plan: Salad, soup, chicken parm & more!

On the menu this week, we have tofu vegetable soup, turkey sandwiches, quesadillas, chicken parmesan, homemade veggie pizza and lots of salad! What's on your menu this week?

Meatless Monday

Vegetable soup with tofu

French bread 



Turkey sandwiches on whole wheat buns with tomatoes, lettuce, onions, light mayo, bread & butter pickles



Cheese Quesadillas

Spanish rice

Steamed carrots


Chicken Parmesan

Bow tie pasta



Homemade veggie pizza using HT dough ball (The recipe is in WRAL Recipe Database at link above. Search for pizza dough ball.)

Baby carrots dipped in light ranch dressing

Orange slices

    You're welcome, jdouglas! Oh, how did I forget about potatoes au gratin? I haven't made it in years...probably because once I make it I eat waaaay too much of it. It's probably better for my weight that I did forget about it. I'll definitely be adding that to my "I can only make this once or twice a year" set of recipes. :)

    smolder, thanks for the roasted potatoes recipe! Sounds very yummy and will be appearing on the table this evening :) Much easier than what I was thinking, too (au gratin/scalloped potatoes).

    I think the reason I have so much trouble planning a menu is I never know from one day to the next what I will feel like eating or cooking. Thankfully, my freezer is full, as is my pantry, so I can wing it without having to walk 20 miles in the snow to the nearest grocery store! LOL No joke, though, my nearest store is like 9 miles away and is not anyplace I'd ever buy anything perishable, which kind of negates the whole point of going there.

    I think I may just be making those roasted potatoes with my dinner tonight, too. i just discovered some turkey meatloaf that I "flash froze" but forgot to wrap up for longer storage...LOL. We'll be eating that tonight and the potatoes will compliment it well.

    Faye, I'm with you on the kids snacking on veggies! Last night my almost 3 yr old kept "stealing" the carrot sticks I was cutting up. I almost did cartwheels in the kitchen I was so excited (he has been boycotting all veggies for over a year now).

    Well, even when you have everything all planned out stuff happens to throw it into chaos. Nobody wanted soup and salad for dinner last night (and really, I wasn't that in the mood for it - lol) so I just popped in a Stouffers veggie lasagna I had in the freezer and we had that instead with the salad. Meal mutiny averted and no extra money spent. It's just like you wrote, smolder - at least we have stuff in the freezer when we need something at the last minute.

    I did have to laugh, though. When I said we were having soup and salad, the girls were whining about having salad again. BUT when I put the veggies on the table before the lasagna was done, they started coming into the kitchen to "sneak" grape tomatoes, carrots and cucumbers. By the time the meal was served, half the salad was already gone. I can't complain about them snacking on veggies though.

    jdouglas13-Here's my fav way to roast case this strikes your fancy and helps with the "something to do with potatoes" dilemma for tonight. Cut russet (or your fav potato) into bite sized pieces, add chopped garlic, bite sized thick slices of onions and toss all in a bowl with some extra virgin olive oil, salt and italian seasoning to taste (I like a lot). Spread out on a sheet pan in a single layer and bake at 375 until done.

    T-Boneless skinless chicken breast with chicken and herb couscous, 2 veggies(probably carrots and another veggie), jello vanilla pudding for dessert
    W-thinking mexican dish of some sorts, have lettuce, tomato(that need to be used), sour cream, tortillas, cheeses, olives, black beans, just need to thaw out meat
    T-homemade pizza, pillsbury pizza crust, pizza sauce, spinach, and other assorted fresh veggies, any left over meats from the week, cheese
    F- again not a clue
    I can switch and trade any menu to accommodate my schedule, maybe in a few days I'll know what my Friday meal will be

    I;m also in the I have no clue club this week. I made black bean and sweet potato soup last night for dinner, except I didn't have half of the ingredients the recipe called for, and my subs were not ideal. Needless to say, it was not the best meal we ever had, but I can see the potential with the right ingredients.

    Tonight, chicken drumsticks, salad, and something to do with potatoes. Oh my....

    I'm with you newsnut. Yesterday we had BBQ beef and potatoes, but the rest of the week is a big mystery at this point! I just can't seem to get my head on straight and get back to the weekly meal planning here recently. At least (thanks to Faye!) I have plenty of things stocked up that I can whip up nightly, even without a plan.
