Monday meal plan: Reindeer pancakes!

This week on the menu, we have baked mushroom chicken, stir fry shrimp, egg and cheese biscuits and reindeer pancakes! Please share your meals for the week or just today!

 

Meatless Monday

Homemade pizza using whole wheat veggie dough ball from HT, mushrooms, fresh spinach, onions, black olives (recipe for the crust is in the WRAL Recipe Database in the link above - search "dough ball pizza crust")

Steamed broccoli, carrots and cauliflower with a touch of Parmesan


Tuesday

Chicken lasagna (Stouffers frozen family size on sale with coupon last week – it’s a really busy day and evening so I needed an easy meal)

Broccoli


Wednesday

Egg, turkey bacon (from Lowes Foods sale through 12/18 with coupon), cheese and biscuit sandwiches

Raw veggies (carrots, celery, cucumber slices) dipped in a little light ranch dressing

Tangerines


Thursday

Baked mushroom chicken served on pasta

Salad


Friday

Stir fry shrimp and veggies

Rice

Leftover salad


Reindeer pancakes breakfast:
This morning I batch cooked pancakes to have for breakfast this week and my daughter and I got a little creative. You can see our version of “reindeer pancakes” in the picture above. I used Butterball turkey bacon for the antlers (on sale with printable coupon at Lowes Foods through 12/18), M&M’s for the eyes and a raspberry for the nose. They were adorable!  She also made an adorable snowman.

Cute pancakes Faye!

Our meals this week:

Monday: Chicken cordon bleu, baked sweet potatoes.

Tuesday: Beef taco bar, rice, salad.

Wednesday: Potato casserole with smoked turkey sausage, green beans.

Thursday: turkey burgers, homemade baked fries, corn.

Friday: garlic sautéed shrimp, twice baked potatoes, broccoli.

Thanks for sharing your tasty menu pss3! I see Friday is shrimp night for both of us this week. :-) I could eat shrimp every night of the week, but my budget says something different (so does my youngest child).

Oh Faye...I just love shrimp! Our budget has not allowed for shrimp in a while...I almost cried when I found a bag while cleaning our freezer last week! Hopefully once the holidays are over, our budget will allow for more shrimp!

Monday: chicken tikka masala Tues: Meatball sandwiches and green beans Wed: tuna sandwiches, broccoli/carrot/potato nuggets Thurs: pasta with broccoli Friday: breakfast tacos

M: leftover veggie chili, salad, rolls; T: meatloaf, roasted sweet potatoes, broccoli; W: pasta night, salad; Th: porkchops, brown rice, sugar snap peas; F: ?not sure yet? (probably something quick and easy...planning to make candy with kids that day, so who knows what we may end up with...)

M- left over pot roast

T- Beef Pie - mashed potatoes, garlic spinach

W- Veggie lasagna, salad

TH- BBQ chicken, Rice, Turnip Greens

F- Spinach Spaghetti, salad

M-IHOP (got an early Christmas gift card from my family) and took my husbnd and his grandmother; T-Lasagna, salad, W-Mushroom chicken, whole grain/brown rice; TH-pizza, salad; F-BBQ pork chops, salad, mexican corn

Very cute pancakes! Re the shrimp, doesn't HT have it on a pretty good sale this week? I thought like 50% off?

As usual, no planned menu here. But last night we had a roasted sweet potatoes and broccoli with a pork loin roast, garlic, EVOO, and herbes de provence. I got a whole loin on sale a while back that I cut into 4 or 5 roasts.

Tonight I have some ham I need to use up that was intended for au gratin potatoes with ham baked into it. Never got to make it, but tonight we will have roasted tomato/mushroom/cheddar omelets with pan fried ham. I am hoping to make fried rice with the leftover pork tomorrow. I think Wednesday will be clean out the fridge night -- maybe soup?

We also have left over pork loin to use up. Here we are having:Monday-crockpot pork & black bean stew & biscuits, Tues- salmon pie & broccoli, Wed- taking mac & cheese to a pot luck dinner, Thurs-chicken enchildas & green beans, Fri- chicken & tri-color pepper with bowtie pasta & salad

Found a yummy looking recipe for Egg Muffins (eggs cooked in muffin tins). Have any of you tried this before? Any tips? Here's the recipe:
