Monday meal plan: Orange chicken, soup, chicken parmesan & more!

This week we are mostly eating from the fridge, freezer and pantry. After spending a little extra on the holiday meal last week, I am spending a little less this week so we stay within the grocery budget for the month.

What's for dinner at your house?

Meatless Monday!

Homemade veggie pizza using a whole wheat HT dough ball, pasta sauce, mushrooms, green peppers, onions, black olives and mozzarella cheese.

Leftover bow tie pasta from last night

Steamed broccoli with a touch of butter and Parmesan

Tangerine slices


Tuesday

Foster Farms orange chicken

Sweet potatoes (I’ll be batch cooking a bunch of taters and making more pies!)

Sugar snap peas


Wednesday

Soup and sandwiches on a cold Wednesday evening - probably vegetable soup and grilled cheese sandwiches (grown-up grilled cheese for me and my husband with tomatoes, spinach, onions and light mayo)


Thursday

Chicken Parmesan

Spaghetti

Salad


Friday

Scrambled eggs

Biscuits

Veggie bacon

Steamed carrots

Pineapple slices (whole pineapple on sale at Aldi this week for .99 through 11/27)

M- leftover roasted chicken (freebie for being a Bzzagent) with my mom's fried mashed potatoes (eggs/onions/montreal steak seasoning), cranberry fruit salad T- bratwurst cheddar patties with green beans and potatoes W- hamburger veg soup w/cornbread T- leftover soup w/grilled pimento cheese sandwiches F- slow cooker bbq with bbq slaw and hushpuppies S- bbq sandwiches for the guys, bbq salad for me S- not sure yet

Monday- shrimp/chicken alfredo, Tue- boneless chicken thighs cooked in italian dressing, baked sweet potatos, green beans, wed- leftovers, thur- tuna helper, peas and carrots, fri- homemade pizza, sat, leftovers or sandwhiches, sun-homemade chicken and dumplings and glazed carrots.

Is that lasagna in the pic? I have never made a homemade lasagna before but that pic has me thinkin. mmmmmm

Mon-Thai green curry chicken & rice, zuccini- Tues-leftover turkey soup & cheese quesadillas, sliced apples- Wed Spagetti with Jennie O sausage & salad, Thurs-baked chicken, sweet potatoes & green beans, Fri-homemade pizza & salad Sat- Ham, au gratin potatoes & broccoli

M - leftover sandwiches (pulled rest of turkey off to freeze for a cassarole later on) T - breakfast cassarole W - homemade chili Th - ? F - pizza & salad

poetically - that was a picture of chicken parm. I also added a picture of the pizza we made last night. Half with green pepper and 1/2 without.

Lasagna isn't that hard to make. I always make veggie lasagna using a recipe similar to this one:

Sometimes I use spinach instead of green peppers. I often use cottage cheese instead of ricotta because my husband doesn't love ricotta.

I wish I had bought a bigger turkey now! Many of youare still eating leftovers and we were done with the turkey on Saturday. I did send home plenty of turkey with the guests though so that depleted the leftover stash. I do recommend the turkey oven bag method. I used it for the first time this year and the meat was moist and delicious.

poetically, Faye's right. Lasagna is really easy. It's all about layering. The most important thing to remember is your baking pan needs to be deep enough. Barilla's no-boil lasagna makes it even easier. I don't cook them, but I do soak them for a few minutes first in a big bowl of water so they don't soak up all the sauce from the casserole.

We got kinda tired of turkey by Friday this year, so I pulled all the meat off, cubed it (which is a great way to hide the dark meat if you're not a fan), and divided it up into meal-size portions and froze it. Use it in soup, pasta dishes, veggie stirfrys, whatever else you can think of. Since it's just the two of us, I'm thinking we can probably get at least another six meals out of the leftovers.

Oops, forgot this was the menu post... we had homemade pizza last night, spaghetti carbonara with asparagus the night before, and no clue what else the freezer is going to magically produce for the rest of the week! I'm not feeling inspired, so I'm hoping I get some ideas from everyone here.
