This week we are mostly eating from the fridge, freezer and pantry. After spending a little extra on the holiday meal last week, I am spending a little less this week so we stay within the grocery budget for the month.
What's for dinner at your house?

Homemade veggie pizza using a whole wheat HT dough ball, pasta sauce, mushrooms, green peppers, onions, black olives and mozzarella cheese.
Leftover bow tie pasta from last night
Steamed broccoli with a touch of butter and Parmesan
Tangerine slices
Tuesday
Foster Farms orange chicken
Sweet potatoes (I’ll be batch cooking a bunch of taters and making more pies!)
Sugar snap peas
Wednesday
Soup and sandwiches on a cold Wednesday evening - probably vegetable soup and grilled cheese sandwiches (grown-up grilled cheese for me and my husband with tomatoes, spinach, onions and light mayo)
Thursday
Chicken Parmesan
Spaghetti
Salad
Friday
Scrambled eggs
Biscuits
Veggie bacon
Steamed carrots
Pineapple slices (whole pineapple on sale at Aldi this week for .99 through 11/27)

poetically, I usually use two 8-oz bags of shredded cheese for lasagna (at least) and try to have an extra around if I need it. It depends how big your casserole dish is. For your pizza, try baking it on the lowest rack of your oven, ideally on a pizza stone or cast iron pizza pan. Usually, less is more for toppings on pizza. I always need to use restraint because I like things cheesy too. Are you using sauce on your pizza? A little goes a very long way. HT their fresh has pizza dough on sale this week for $0.99. Why not give it a try and see if you like it better.

Our sweet taters are in the oven. I am batch cooking 12 of them. My hubby scored a 40 lb box of local sweet taters from a farmer he works out with at the gym. They are so good and only 22 cents per lb. So...time for more pies and more frozen mashed sweet taters.
All this talk about lasagna and I believe it will be on the menu next week. :-)
