Monday meal plan: Orange chicken, soup, chicken parmesan & more!

This week we are mostly eating from the fridge, freezer and pantry. After spending a little extra on the holiday meal last week, I am spending a little less this week so we stay within the grocery budget for the month.

What's for dinner at your house?

Meatless Monday!

Homemade veggie pizza using a whole wheat HT dough ball, pasta sauce, mushrooms, green peppers, onions, black olives and mozzarella cheese.

Leftover bow tie pasta from last night

Steamed broccoli with a touch of butter and Parmesan

Tangerine slices


Foster Farms orange chicken

Sweet potatoes (I’ll be batch cooking a bunch of taters and making more pies!)

Sugar snap peas


Soup and sandwiches on a cold Wednesday evening - probably vegetable soup and grilled cheese sandwiches (grown-up grilled cheese for me and my husband with tomatoes, spinach, onions and light mayo)


Chicken Parmesan




Scrambled eggs


Veggie bacon

Steamed carrots

Pineapple slices (whole pineapple on sale at Aldi this week for .99 through 11/27)

    Gr8Fun - thanks for the encouragement! I, too, don't have much of an appetite, I eat out of necessity. I am truly hoping it will get better in the 2nd trimester....just a few more weeks to go!

    poetically, I usually use two 8-oz bags of shredded cheese for lasagna (at least) and try to have an extra around if I need it. It depends how big your casserole dish is. For your pizza, try baking it on the lowest rack of your oven, ideally on a pizza stone or cast iron pizza pan. Usually, less is more for toppings on pizza. I always need to use restraint because I like things cheesy too. Are you using sauce on your pizza? A little goes a very long way. HT their fresh has pizza dough on sale this week for $0.99. Why not give it a try and see if you like it better.

    mrschizzy - I too am pregnant (28 weeks) and have had no appetite my entire pregnancy. Nothing seems appealing to me even when I'm hungry. I have no difficulty preparing meals though. My trouble is when I haven't planned something to prepare, I can't "get in the mood" for any particular food. Best of luck with your pregnancy...first trimester will be over soon!

    Last night we had BBQ baked chicken, salad, and baked potatoes with a crescent roll on the side. Tonight we're having Ribeye pork chops, steamed broccoli with sprinkled cheese, and possibly baked beans or mashed potatoes. Tomorrow night it's homemade pizza - the meats for my boys, veggies for me - and salad on the side.

    I can't wait to get back to meal planning...and cooking for that matter! Being newly pregnant has thrown all of that to the curb. I never know what my stomach can handle and I can't stomach looking at, smelling, or handling raw ingredients of any kind. I miss cooking and baking for my family!

    Also Faye that veggie pizza looks delicious as well. I like to make homemade pizza and I usually use the pizza dough out of the can that you roll out but sometimes it will come out too doughy even though I cook it a few min first before adding the toppings and then the toppings get too cooked when I try to leave it in longer for the dough. Do you think I am adding too many toppings? or is it the type of dough I use? Thanks for any advice!

    I love! I am going to give it a try and I think I will use the Barilla no boil noodles too. And also, when making a lasagna typically how much cheese will I need? I like lasagna to be really cheesy so two bags of shredded cheese? Thanks and I hope everyone has a great day!

    Thanks, Faye. I need all the divine intervention I can get! ;) Great score on the sweet potatoes! I think HT is going to have a 2 lb container of ricotta on sale this week. I want to say Sorrento, but I'm not sure. Lasagna does sound good after the turkey overdose. Oh, and I unearthed a really nice steak from the freezer that I didn't even know I had, so tomorrow night I'll be cooking it on the grill. Tonight still doesn't look promising, though. Maybe breakfast for dinner??

    jdouglas - I hope that you have a divine recipe intervention and figure out something to eat tonight!

    Our sweet taters are in the oven. I am batch cooking 12 of them. My hubby scored a 40 lb box of local sweet taters from a farmer he works out with at the gym. They are so good and only 22 cents per lb. So...time for more pies and more frozen mashed sweet taters.

    All this talk about lasagna and I believe it will be on the menu next week. :-)

    Oops, forgot this was the menu post... we had homemade pizza last night, spaghetti carbonara with asparagus the night before, and no clue what else the freezer is going to magically produce for the rest of the week! I'm not feeling inspired, so I'm hoping I get some ideas from everyone here.
