Monday meal plan: Lasagna rolls, tacos, salmon & more!

The new recipe of the week is Giada's Lasagna Rolls! We'll also be enjoying chicken tacos, baked salmon, "deluxe" grilled cheese, omelets and more!  What's on your menu??

 

Meatless Monday

“Deluxe” grilled cheese sandwiches on rye bread (marked down to .99 for a loaf at Lowes Foods this weekend!) with choice of cheese, tomatoes, spinach, onions)

Vegetable Soup

French bread


Tuesday

Baked salmon

Mahatma rice – free at HT and LF with .50/1 coupon from 1/27/13

Steamed carrots


Wednesday

Omelets with choice of sautéed veggies (mushroom, onions and spinach), turkey bacon, cheese

Pasta salad with green peppers, onions, tomatoes, black olives

Orange slices


Thursday

Chicken tacos (with all the stuff to stuff them with!)

Spanish rice

Sugar snap peas


Friday 

Veggie Lasagna Rolls from Giada at TheFoodNetwork.com. I just love to watch her cook. She has so many good ideas. With this recipe, I will be amending it, as usual. Instead of ricotta, I use cottage cheese (cheaper and my husband prefers it). Instead of prosciutto, I’ll be using chopped and sautéed mushrooms to add to the cottage cheese and spinach mixture. I will also be using 2% milk for the bechamel sauce.

    kat - that is so funny that you posted this! I just posted a thread about super bowl snacks before I read your comment. I am doing a segment on Thursday on the 12:30 news so I am hoping many of you will share your frugal super Bowl food ideas. I'll be posting my favorite BBQ chicken dip recipe when I have a chance to get it.

    I love your potato bar idea! That's a frugal and really tasty option that each person can make very healthy or go crazy with. I may just use that one on the air - thanks!

    I would love to hear what everyone is making for Superbowl Sunday snack!!! This year, I am hosting in our new house and making a "Build Your Own Baked Potato Bar"

    nakabi :) I do a lot of batch cooking, that way there is always something ready to thaw and heat and eat :) Gives me more freedom to indulge my time elsewhere (sewing quilts) and not feel guilty that I'm not cooking for hubby LOL

    Carrots - soup - winner! I love carrots and really go heavy on adding them to any soups I make.

    Your lasagna rolls sound great, Nancy! I think I will take your advice and add the onions and peppers. Yum.

    astamper - I used 1/2 a bag of the carrots in the veggie soup I made tonight. Maybe it's soup time, as Nakabi suggested.

    astamper-have you ever made carrot soup? it's quite delicious if cooked correctly. what about carrot juice? I drink it several times a month and enjoy it with a bran muffin.
    Nancy-I'm beginning to realize you do not enjoy cooking :) btw, I enjoyed reading your responses on the wral article on NC licenses :)

    Love lasagna rolls, I usually make it with whatever I have on hand. I do use ricotta cheese though. Cooked broccoli is delicious in those as well as grilled onions, peppers. I use a tomato based sauce.

    I batch cook those, flash freeze and vacuum seal. Can you tell I hate to cook daily? LOL

    nakabi, I have used several things with the anasazi beans. I will have to try it with the crunchy quinoa. I have put them over brown rice, put small round parsley dumplings in the the beans, the kids will put homemade croutons in them and we have eaten them with just a hamhock or bacon/seasoning salt/paprika and a good amt of black pepper.

    jdouglas-thanks for the paneer recipe; I'll try it and let you know how it turns out! Hot sauce is a must when I make macaroni and cheese; I usually add it to the water that the noodles are cooking in so they get flavoured as they cook. Will have to try adding it to the cheese sauce. And I agree, I like my macaroni and cheese topping crunchy. When it's not I find it slightly nasty lol...have you ever tried curry powder in your macaroni? mmmm
    I use a Berghoff zeno pressure cooker. I got it on a really good sale at the kitchen collection outlet at Nags Head several years ago (around $30).

    floomamia-your crab stuffed tilapia sounds yummy!
