OOps.. if anyone cares to share their recipes, I'd love to try some! Wouldn't it be fun to have a blog get together one day and bring a dish to share?

ncuslum09-I do most of my prep work on the weekends. I also do a lot of extra chopping while I'm cooking. For example, tonight while the pernil was in the oven, I went ahead and chopped the turkey for the tettrazini for tomorrow, chopped the chicken for the curry, and chopped off the broccoli stems (I use fresh) for Thursdays meal. That saves me a lot of time during the week. Since I already have the oven on for the pernil today, I will probably make the tettrzini tonight to save on the electric bill. I try to combine my cooking if possible. The longest thing to make this week will be the tamales, esp. since I need to get the tomatillas for the salsa verde. I grew up eating very diverse food due to living all over the world so my way of cooking seems to be normal to me..lol..You are more than welkom to come over anytime for supper!!!! jdouglas-Unfortunately I'n not one for baking :( I know, so sad! I will be baking cookies starting this weekend as well. I will be making oatmeal chocolate chip, oatmeal raisin, cranberry orange, white chocolate chip, chocolate peanut butter cookies and possible pecan butterballs.

Mac & cheese, broccoli for Meatless Monday. Nakabi, I am going to steal your tettrazini idea for one night. Sounds good and I have turkey in the freezer. Maybe Caesar salad with shrimp if it stays warm. As usual, I'm freezer diving and making it up as I go along.

Now baking, I can answer. This week starts the cookie baking extravaganza. On the list so far shortbread cookies with mini choc chips and orange zest, caramel stuffed cookies, brown sugar shortbread, Mexican wedding-type cookies, fruitcake cookies (for the baker, my fave), gingerbread people, decorated sugar cookies. Haven't decided yet on the seriously chocolate cookie, but it will probably include one kind dipped in chocolate.

nakabi, I would love to follow you around! your menu is always so diverse, and so tasty!! Do you do a lot of weekend prep work? or slow cooker meals? I feel like it would take me all day to make some of the things on your menus!! (I say this with envy! haha)
