Monday meal plan: Breakfast burritos, BBQ chicken & more!

Meatless Monday

At the request of my youngest, we are having pasta with light alfredo sauce and sautéed mushrooms, zucchini and red peppers. Mueller’s veggie pasta is free this week at HT with sale and .55 coupon found on their website at http://www.muellerspasta.com/. Pasta sauce was .49 with sale and HT digital ZVR coupon.

Sister Shubert’s rolls (free at HT with triples)

Pineapple (.99 for whole pineapple at Aldi through 4/30 and Kroger through Saturday!)


Tuesday

Breakfast burritos with scrambled eggs, turkey bacon, shredded cheese, sautéed green peppers and onions and salsa.

Fruit salad with the various fruit on sale this week including pineapple, strawberries and blackberries.


Wednesday

Not sure yet – but I don’t plan on cooking because it’s my birthday! Let's just hope there is cheesecake involved!


Thursday

BBQ chicken sandwiches using $1.99/lb chicken breasts in the slow cooker and Kraft honey BBQ sauce.

Brown rice (Free Minute Rice with sale and tripled .50 coupon at HT)

Green salad (good deal on lettuce at Kroger through Saturday at .99)

 

Friday

As always, Friday is pizza night! We’ll either have a homemade pizza using the HT dough balls or frozen Palermo’s pizza.

    And I have two naughty dogs as well. Honestly I can say that being a mom to a toddler is much less frustrating than dealing with my dogs. Yeah, they're that bad...

    smolder, while I can't totally relate since the closest I came to having kids was a boatload of naughty, furry pups, I am wishing you the best for a quick, easy birth :)

    smolder - I totally understand the desire to be "done" sooner than later - here's hoping for an easy and maybe slightly early entrance for the little one! :-)

    jdouglas-Sometimes I think I gain weight just reading your posts! LOL. I hope I can make it to the picnic too, but my first son came early, so I really expect that this one will too. And I certainly wouldn't mind being "done" sooner rather than later. :)

    You're on! Cheesecake(s) and cream puffs for the picnic. Maybe a pasta concoction of some sort too. Y'all better bring some kind of cooler to store your goodies in! LOL

    Faye, I make a mean blueberry sauce, but if you can describe your Mom's raspberry sauce (or have the recipe), I will see what I can do :) Have I mentioned my chocolate torte cake that has raspberries baked into it and is topped with chocolate ganache?

    Smolder, I am so hoping you can make it to the picnic! If not, maybe we should consider having one more than once a year? We could always have an early holiday version in November before all the Thanksgiving work starts. It's still warm enough then.
