Monday meal plan 4/15: Mushroom chicken, teriyaki tofu, salmon burgers & more!

On the menu this week we have creamy mushroom garlic chicken served on egg noodles, egg and turkey bacon enchiladas (recipe included), salmon burgers, teriyaki tofu and veggies and more! What's on your menu?


Creamy garlic mushroom chicken served on egg noodles

Steamed carrots

Green salad

Meatless Tuesday

Teriyaki tofu and vegetables (used Nasoya tofu coupons from Smart Shopper coupons link at Harris Teeter, veggies on sale at Aldi and Food Lion through Tuesday)

Brown rice (Free Minute Maid rice from HT a few weeks ago with sale and .50 coupon)

Egg Roll (Kahiki BOGO sale with .75/1 coupons at Lowes Foods a couple weeks ago)


Salmon burgers on wheat buns (one of the brands of salmon burgers were on clearance ½ price at my local Lowes Foods last week)

Sweet potato fries

Green salad


I am working late so hubby is in charge of making spaghetti with pasta sauce, Steamfresh broccoli and fruit for dinner.


Egg and Turkey Bacon Enchiladas using a recipe from Still using up the eggs from the Easter sales and bought the Jennie-O bacon on sale with coupon from HT a couple weeks ago.

Saffron rice (Free Mahatma rice with sale and .50 coupon at HT and LF recently)

Veggies of some kind – waiting to see what is on sale starting Wednesday

    I remember that great tip you gave me about the Progresso cream of mushroom soup. And sour cream certainly makes everything taste yummy!

    No menus here this week, but if we get a meal on the table at all, I think we're doing great. My DW told me she actually made boil-in-bag rice as part of her dinner the other night. I was so proud! ;)

    smolder - I prefer fresh mushrooms but have never frozen them. I will definitely try that! Thanks for the info. :-)

    angelienna- my son is not quite a teenager yet but is not a picky eatter. Sometimes my dinner winds up being whatever I find to throw together. I don't plan menus because our schedule is always hectic. Usualy our menu (non-menu) consists of some type of pasta/rice dish with chicken/turkey. I try to expose my children to various types of foods. Hope this helps you with feeling able to post your menu or dinner ideas with others on the blog.

    Faye, do you prefer fresh or canned mushrooms? Because if it's fresh mushrooms, you can freeze them (as long as what you intend to use them in is cooked). Whenever they go on a great sale at aldi I buy several containers, wash, slice and freeze in a single layer on a cookie sheet, then transfer to a freezer storage bag. I always have mushrooms on hand ready to sautee for any dish! Just throw them in the pan frozen and they cook up just like fresh would.

    angelienna - there are lots of meat and potatoes eaters here on the blog. We are more like chicken and sweet potato eaters, but that's similar, right?! :-)

    jdouglas, I am certain I drooled while eating it. :-) Actually it was so easy it is embarrasing. I already had the chicken made and shredded. While the egg noodles were cooking, I poured a can of Progresso Creamy Mushroom soup (it is not condensed) into a saucepan. I added 2 big spoonfuls of light sour cream, lots of garlic powder and pepper and let it simmer. I had hoped to get to the store to get more mushrooms, but no such luck today. I warmed up the chicken, and then plated the chicken on the noodles and poured the sauce over it. Topped it with parmesan and we had a delicious and easy chicken stroganoff. The kids loved the sauce as well. Served it with steamed baby carrots and there's dinner on a busy school night. Since I didnt; make it to the store today - no salad either. But tomorrow is another day....

    No, no, no Angelienna! We love diversity and look to each other for different ideas. I really hope you will post your menus.

    My DW, in her ideal world, would have steak and potatoes for dinner every night without a veg in sight. I, on the other hand, could go for days without any meat, but can't go without my pasta and veg. We don't have people kids, only furry ones that bark, but their fave is raw chicken and raw asparagus. No menus are considered strange here -- all are welcome :)
