Monday meal plan 11/12: What's on your menu?

On our menu this week we have chicken tacos, breakfast for dinner, pasta, chicken sandwiches, sweet potatoes and more! Please share your menu for the week or the evening!

Monday

Chicken tacos with choice of toppings including tomatoes, lettuce, black olives, cheese, salsa, sour cream (boneless chicken breast was on sale last week for $1.99/lb. I cooked the whole value pack in the slow cooker with some light Italian dressing. We had ½ on Sunday night and will be eating the other ½ in tacos)

Rice

Steamed carrots (HT has a good everyday low price on 2 lb bag of carrots for $1.17)

Orange slices


Tuesday

Breakfast for dinner!

Scrambled eggs - HT has an Egglands Best deal from Friday Harris Teeter e-mail through 11/13 (Hubby and I will have sauteed green peppers, mushrooms and onions with our eggs)

Veggie bacon

English muffins ($1 at Kroger last week)

Apple slices


Wednesday

Stouffer’s escalloped chicken and noodles

Green Giant seasoned steamers veggies

Tangerine slices


Thursday

I am working last so hubby is making spaghetti and steamed broccoli


Friday

Morningstar veggie chicken sandwiches

Sweet potatoes (on sale at Kroger for .39/lb)

Salad

Haven't made tacos in a while, so that is on deck for sometime this week. Scored some pizzas on mark down at Food Lion last night (don't usually shop there, but figured we'd have a look since they were offering a veterans discount :D), 2 pack of pepperoni for $3.50, so they're on the menu in the next day or 2. They had an insane amount of stuff marked down at my Food Lion, and since I finally got my freezer this summer, I had the room. They also had a pretty good deal on Steak-ums. I usually just buy shaved steak when I can find it under $6/lb for making calzone or cheese steaks subs, but the pound for pound price on them after the veterans discount worked out to $3.28/lb ($3.73/lb without discount), so I guess they'll do. :D I see cheese steak sandwiches in our future as well.

Tonight: Texas Steakhouse & Saloon for Veteran's Day; Tues: Filet of Catfish, veg rice and steamed broccoli; Weds: Baked chicken breast, seasoned cabbage and seasoned blackeye peas; Thurs/Fri: Not sure yet.

Oxy - what do you get for the shaved steak when you don't get Steakums? I have been wanting to do that but haven't found a butcher that could thinly slice it for me so I figured there must be another way.

Lax - If you have a food processer you can use about any cut of beef to make cheesesteaks or calzones out of.

M- spaghetti & meatballs/salad, T- chicken fried wild rice/ steamed carrots, W- bean soup with smoked sausage/ cornbread, T- leftovers from the prev 3 days, F- beef kabobs w/vegetables/polenta, S- BBQ plates from a fundraiser, S-probably roast with veggies.

oxy-what is steakums? chipper4800-your bean soup with smoked sausage sounds yummy!

M-Grilled chicken, wild rice, edamame, pineapple T-Pecan crusted salmon, green beans, orzo W-Red lentil soup, wholewheat rolls, oatmeal raisin cookies Th-Cajun style striped bass, broccoli, mushroom risotto (I'll be going to Faye's workshop in Fuquay Varina so my husband is in charge) F-Chicken chipotle & portabella mushroom w/spinach panini, potato crisps, peanut butter pie

Faye do you use the morningstar veggie bacon? How do you cook it? I bought some and tried cooking it in a frying pan and it tasted very fake to me. Had kinda of a gummy texture. Not sure if it was the way I cooked it or if that is how it tastes. Might be sticking with my turkey bacon, lol!

Our meals:

Monday- Penne pasta with homemade tomato sauce with the last 3 tomatoes from my plants (the frost has just about killed it off).

Tuesday- Apple glazed ham steak, nac and cheese, green beans.

Wednesday- Chicken soft tacos, rice, and corn.

Thursday- Hamburger steak, mashed potatoes, sauteed onions, carrots.

Friday- Pizza and salad.

M- leftovers - beefaroni, salad or pork ribs, salad, fresh green beans - T - whatever my daughter decides to cook W. MIL making chili, salad Th. Salmon, rice, veggies F- leftover chili

nakabi, I want to come over for dinner on Friday! Actually, all of your meals look great and very healthy too (ok well maybe minus the peanut butter pie:)
