Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

This week we are having:

Meatless Monday: Morningstar veggie chicken & provolone sandwiches, homemade baked mac and cheese, sugar snap peas and strawberries (on sale at Harris Teeter through 4/28 for $1.25/lb).

I will also be making attempt #3 at cream cheese and strawberry dessert won tons. I have been wanting to make these all weekend but misc. stuff kept preventing me from having the time to do it. In addition, my daughter made delicious lemon bars Sunday afternoon and that was quite enough dessert for everyone. So I am putting it on the menu again for Monday night. I am using the basic recipe from Diana at www.dandeliongreensblog.com. I don't think mine will be quite as lovely as hers (see the photo above), but I bet they will taste great!

Tuesday: Homemade veggie pizzas, salad, more HT strawberries

Wednesday: BBQ chicken in the slow cooker, slaw, rolls, green beans

Thursday: Teriyaki tofu, fried rice, steamed carrots

Friday: Not sure what is on the menu but I am taking the night off from the kitchen so it's up to the rest of family to produce something that resembles dinner!

    Jdouglas - thought of you today when I was making the Old Faithful homemade mac & cheese. :-) It was soooooooooooooooo good.

    It's so nice to see so many people posting here!! :)

    I think we are having an omelet for dinner with my go-to summer side salad of green beans, corn, halved grape tomatoes, shallots and a lemon vinaigrette. Easy. Yummy. Few dishes.

    That's all I got. No menu plan, but what else is new. At least I'm cooking tonight!

    Faye- I found the trout frozen at Trader Joe's! I'll let you know how it turns out!

    Baseball2hockey- hope you enjoy the spiral veggie slicer. We use it often here.

    LOSLTP- I used to fish when I was younger with my dad and 2 brothers, too! I'll never forget the most amazing dinner at the lake when my mom pan fried it up and we had it as sandwiches!

    Still on birthday strike today is my actual birthday.......its bittersweet I cried last night bc I'm getting older, but my coworker, friends and family have made me so happy today I guess I'm ok with this new age :)

    Hoping to go out to dinner tonight but if not there is left over chili in the fridge and that will be dinner. Not sure about the rest of the week yet....

    My In-laws are coming today to stay overnight on their way back to MA and I planned on making Spaghetti with meatballs. But for a week now I have been eating more healthy ( a lot of fruits and veggies) and incorporating exercise, that I will be making my spaghetti from zucchini instead, after picking up a spiral veggie slicer at Williams Sonoma and will be using my 20% off coupon they sent me in an email. I will also serve a side salad with cucumbers, tomatoes and homemade dressing made from pickle juice, olive oil, salt, pepper, garlic powder.

    Brings back Super Happy memories of fishing with my daddy - fried trout on the campfire was a wonderful meal
    This week ( in no order): (A)roasted , stuffed chicken ( Food Lion ) , sweet taters , green beans( Korger) homemade rolls and strawberries(testing from local produce stand );
    (B) steaks on grill , corn ( Kroger ) , salad ( fixings from Kroger, FL and produce stand);
    (C) pork roast ( slow cooker ), veggies & fruit to be determined
    (C) angel hair pasta with marinara sauce ( pasta-sale & digital coupons at Kroger ; tomatoes canned last summer) and veggies to be determined - probably salad with fruit for dessert
    (D) Seafood/fish of some sort with slaw and mac & cheese ( or pinto beans ), cornbread (E)probably leftovers a night or two ; birthday party for neighbors' 1 year old Friday or Saturday - dinner out ( and movie?) the other night

    Was traveling this weekend and no time for food shopping. Luckily, I found a bowl of beef stew in the freezer. Easy dinner for us tonite!! YAY!!!
