Pasta Salad

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

This week we are having:

Monday: Salmon, baked sweet potatoes and broccoli florets

Tuesday: Spaghetti (requested by my oldest daughter), garlic bread, salad

Wednesday: Pot roast in slow cooker with potatoes, mushrooms, onions and carrots, rolls,

Thursday: Breakfast for dinner with scrambled eggs, turkey bacon, cheddar biscuits, fruit salad

Friday: Baked chicken in creamy mushroom sauce, egg noodles, asparagus (if we get a good deal on it starting Wednesday)

    Dr D - thanks! I do know about their quality policy but I am glad to hear you have not had any issues. I have bought their a salmon a number of others times with no issues, so hopefully it won't happen again. Thanks again!

    I buy the smaller size package (4 pound, I believe) of frozen skinless salmon from Aldi every couple of weeks, and have never had a problem with it being bad. They are often of different sizes/shapes, but all about the same pinkish shade. Sounds like a quality issue for that one serving. My Aldi is great about guaranteeing the quality of their products, so if you let them know about it, they will likely refund your purchase price AND let you get another package. Here's the info on their double guarantee:

    Had an odd salmon experience tonight. I used salmon fillets from Aldi and baked them with an herb and garlic marinade One of the 4 individually plastic sealed pieces of fish was lighter and a different shape than the other 3. Once they were baked, the lighter one smelled bad. We ended up throwing it away. Anyone else had an issue with salmon from Aldi?

    Jdouglas- thanks for the heads up on asparagus. Seems like I shop at food lion more and more these days!

    Faye, Food Lion has asparagus right now for ~$1.48/lb. It was really nice too, at least the at the Pritchard Road store.

    Last night, DW made herself a sandwich because I was feeling lazy and not hungry, so tonight I need to step it up a bit. Maybe macaroni-tuna salad with some devilled eggs on the side. I also think one night we are going to have Toad in the Hole (Yorkshire pudding with sausage baked into it) and a salad. That's all I've got so far!

    lindabates - great looking menu! And I agree with wildfrenchrose - I love your Friday "menu"!

    As I posted in the meal plan, we are having salmon, baked potatoes and broccoli. I also picked up some of the $1.50/lb strawberries at HT this morning (while going through the store to confirm continuing sale dates for super doubles) so we will be having some strawberries tonight as well.

    We are having tacos tonight with all the trimmings!! Unless it rains by the time I get home then it will be chili :)

    Chicken enchiladas, green salad and rice. Grilled up a bunch of chicken yesterday to make several meals this week.

    Monday- hotdogs, waffle fries, and baked beans
    Tuesday- BBQ chicken, homemade Mac n cheese, grilled corn
    Wednesday- breakfast casserole in the crockpot with a side a fruit
    Thursday- shake n bake pork chops, mashed potatoes, green beans and garlic toast
    Friday- whatever you can find,this mom is not cooking!
