It seems like it's been forever since I met up with Jennifer Huntington to feature her on Go Ask Mom back in February.
But I'm reminded of her all the time ... especially when I realize that my bag of Huntington Kitchen granola is empty and I need to grab some more. Yep, I love it.
The Raleigh mom of two launched Huntington Kitchen more than two years ago. She focuses on making granola and grinding fresh nut butters, which she's shipped across the state and country. She's been involved in all kinds of local farmers' markets, sporting events, art galas and fundraisers. And she sells her products through local CSAs and produce delivery companies. You also can find it on the shelves of Southern Season, Midtown Olive Oil in Raleigh's North Hills, Cafe Helios and Bean Traders, among others.
This month, she started making marshmallows from scratch, including flavors such as vanilla bean, mint chocolate chip and peanut butter chocolate chip marshmallow. They are sold at Cafe Helios.
"We have felt the love and support from our customers and could not be happier that we decided to take the leap of faith and start this business," she tells me. "We always try our best to listen closely to our customers’ interests and use that as our inspiration when we are testing out new recipes in the kitchen."
In September, after hearing from customers who have Celiac disease or are sensitive to gluten, Huntington, who has a background in nutrition, switched to using gluten-free oats. All of her granola is now made with certified gluten-free oats. They also use Non-GMO Project Verified canola oil made in a facility in eastern North Carolina.
"As we grow, we continue to produce our products in small batches to ensure each jar of nut butter and bag of granola is of the highest quality," she tells me. "Looking ahead to 2014, there are some exciting changes about to take place for our brand (we’ll keep you posted!) and we could not be more excited to see where the road leads us!"
