People are always asking me where to take vacation. What's a cool place? What's the most scenic drive? Carolina Conversations attempts to answer those questions and others.

Outrageous B.L.T.

It is part of my job: to be open-minded – to objectively analyze new ways of doing things. We talked a lot about the perfect bacon, lettuce and tomato sandwich last week. I offered my new & improved model featuring basil and mozzarella. Many of you said you like to keep the recipe simple and were adamant about the type of mayonnaise used. I think we can all appreciate and respect that. However, with an abundance of fresh tomatoes this time of year I think it’s good to alter recipes – to add and subtract a few ingredients to surprise and delight the palate.

Get ready for the Outrageous B.L.T. It caught my eye on a menu in Chapel Hill yesterday. I was there working on a music project with Brent Lambert. For lunch Brent suggested we walk a couple of blocks from his studio to “SandwHich” just behind the old Pyewacket Restaurant at 431 W. Franklin Street. With about 16 sandwiches and a wide array of interesting salads to choose from it wasn’t an easy decision. But I knew how much the Carolina Conversations bloggers love to discuss tomato sandwiches. So I opted for the Outrageous B.L.T. It should come with a warning: Extra Napkins Required. It was messy but marvelous! The ingredients that really gave this sandwich a kick were the avocadoes and jalapenos. Yum! The order includes potato chips and pickled carrots.

Brent says the rest of the menu at SandwHich is outrageously good but he wasn’t too crazy about talking this up on the blog. He doesn’t want a long wait for lunch next time!

My sister always orders cheese and tomato on her country ham biscuits at Bojangles!!

I usually take out the lettuce but put in a slice of American cheese. The bacon, tomatoes, and mayonaise remain....of course.

I had some sliced tomatoes with my homemade meatloaf last night. They were delicious; very red and ripe.

Miracle Whip has it's place on some sandwiches but Hellman's is my most favorite mayonnaise. Growing up with a family of 7 in Ohio and only Dad working Mom had to make ends meet the best she could so we often had SpinBlend on the table which is a step (maybe 2) below Miracle Whip. But Mom was a good cook and could make anyting taste good so we always thought it was great. (Live and learn!)

I agree with Merit's in Chapel Hill. That's the only real BLT, all the rest are copy's of Merit's. But, only order a half BLT, unless you haven't eaten for two days. There has to be at least a half pound of bacon on a whole one.
