Maybe you've heard of these. They're news to me. Thanks to the good people at Camp Kaleidoscope, I have a new and easy recipe the kids love.

I was looking for a fun dinner to make for my daughter's birthday. It's always a struggle to find something everyone likes and will eat a lot of. I think I found it in Walking Tacos.

All you do is get individual bags of Fritos corn chips or Doritos for everyone. Crush them up a bit, always fun to do when it's not an accident. And add any taco toppings you like, right in the bag!. We did ground beef, lettuce, tomatoes, cheese, salsa, cilantro and sour cream. Whatever your heart desires. All that's left is to grab a fork and dig in, right in the bag. Makes for a quick and easy clean-up too.

It was a huge hit. The birthday girl even had seconds! We had family in town that weekend and I'm not sure who liked it most, Campbell or her grandfather!
