Recipe: Wilted autumn greens

Western Wake Farmers' Market

Here's a recipe using fall greens and apples. It's very simple to make and quite tasty.

Wilted autumn greens

Ingredients:

1 pound of hearty greens (swiss chard, collards, kale)

1 teaspoon salt

1 Tablespoon white balsamic vinegar

3 Tablespoons olive oil

1/2 teaspoon sugar

1/3 cup chopped pecans

1 to 2 apples, thinly sliced and tossed with 1/2 teaspoon lemon juice

Extra 1/2 teaspoon lemon juice

Optional: 1/4 cup shredded Parmesan cheese

Instructions:

Chop greens, removing tough center stems. Sprinkle with salt, toss to combine and let sit for two hours. The salt draws out the moisture in greens and results in a nice wilted green with less dressing required. Combine white balsamic, olive oil and sugar, whisking gently and allowing sugar to dissolve. Up to an hour before serving, drizzle dressing over wilted greens and toss to combine. Add the extra ½ teaspoon lemon juice and gently mix again. Top with chopped pecans and sliced apples and optional cheese. Enjoy as a side dish or light lunch. Makes 4 servings.

Sept. 3: Free face painting with LynneSue and live music by "No Worries."

Sept. 10: Our big annual fundraiser! This year, we're holding a Pig Pickin' Palooza at the market from 11 a.m. to 2 p.m. The market will stay open an extra two hours. Tickets can be purchased in advance at the market for $8, or $10 at the "door." A kids meal ticket is $5. There is a vegetarian plate option.

The Butterfly Lady joins us to teach kids about the life cycle of the butterfly and a special butterfly release at 11:30 a.m. (weather permitting).

And Waterwise Landscaping with the Town of Cary. Jeff Hall, conservation program specialist, and Shannon Hathaway of Green Heron Landscaping will answer questions about turf management and plant selections that use water wisely and enhance the beauty and interest of landscapes.
