What's on your menu for the week?
We had our July 4th family cookout on Sunday evening since both kids will be hanging out with friends at fireworks Monday evening. So before they head out, we are having a simple dinner of leftover grilled smoked turkey hot dogs with sides of roasted sweet potatoes and fruit salad (watermelon, cherries, strawberries and blueberries)
Teriyaki chicken, stir-fry zucchini, mushrooms and onions and veggie egg rolls
BBQ beef sliders on Hawaiian rolls using a London broil in the slow cooker that was on sale a few weeks ago, squash and onions
Cajun shrimp on parmesan butter pasta shells, salad
Homemade mushroom and black olive alfredo pizza again this week because the kiddos requested it yet again for the 3rd week in a row and I still have a couple HT dough balls from the sale last week in the freezer. And the shredded cheese is B2G3F at HT. And I still have free pasta sauce from HT SD. And honestly, it's really tasty! Side of spinach and kale salad with chopped veggies (cukes, 'maters, carrots), croutons, dried cranberries and a balsamic dressing.
Here's the pizza recipe again:
I pre-baked the crust with a bit of olive oil spray and seasoning for 8 minutes before putting on the toppings and baking for another 9 minutes at 400 degrees on my pizza stone.
