Ice cream shop looks for lasting location

Laura Suther is hoping to turn a limited engagement into a permanent position in the Raleigh restaurant market. She is the owner of Pop Up Ice Cream Parlour, which holds the lease for a Wilmington Street storefront through the summer.

RALEIGH, N.C. — Laura Suther is hoping to turn a limited engagement into a permanent position in the Raleigh restaurant market. She is the owner of Pop-Up Ice Cream Parlour, which holds the lease for a Wilmington Street storefront through Aug. 31.

"We're not popping up in different locations," she said. "We want to go from pop up to permanent."

The summer sweet shop adds diversity to the ever-exploding dining options in downtown Raleigh.

"I think downtown Raleigh is becoming bigger and more like Charlotte or Atlanta," Suther said. 

The short-term lease offered a great risk-reward ratio for this would-be restaurateur. 

"There are great restaurants that are well-known beside us, so we didn’t feel it was too great of a risk because we are in a great location," she said.

Those other downtown businesses have been welcoming to their summertime neighbor. 

"It’s a great experience, so we really hope they find a permanent place here downtown," said Carla Chirico of the Downtown Raleigh Alliance.

Pop-Up Ice Cream Parlour serves cups, cones, floats and sundaes made with ice cream produced with milk from North Carolina farms.
 

Richard Shuping was indulging in some chocolate/peanut butter on Friday afternoon. "I've eaten lots of ice cream from a lot different places. I love all the local places and this place is really good," he said.

"The peanut butter is really rich. You can tell they made it."

Nine-year-old Trace Howard called the white mint chocolate chip flavor "very close to the best thing in the world."
