It really is what's on hand. But it goes something like this (substitute just about anything except the eggs :)
Grilled onions, peppers (I use one bag frozen mix) 4-8 Adele Chicken sausages cut up in small bites and pan grill 1 bag shredded cheddar cheese 1 can small diced tomatoes, drained 18 (or more) scrambled eggs
I cook all the items necessary first, throw those all in a large bowl, then add the remainder of ingredients. Then I pan warm the large 10" flour tortillas (get those at Aldi's for $1.29 a package of 8) and fill/wrap and stack those on a serving tray. Then I get out my vacuum sealer and bag 2-3 per bag and vacuum seal without totally crushing them. Toss them in the freezer and have a whole lot of quick breakfast/lunch items.
I've used cut up cooked chicken, breakfast sausage, anything I have available for the meat.
Micro from frozen is about 2 min per wrap. From fridge temp, 30 seconds.
