Okay so my Hubby is laughing at me for starting this Group since I am neither. I am learning and very interested in learning how to cook and create new menu ideas. I have a Daughter by marriage who is vegetarian and I really do not have a stumbling block when it comes to her and cooking. Now enters a wonderful Friend of ours who is Vegan. We so love having her over for dinner and Family events. I just hate her coming up and having the same old things...I am learning whatever I make for us as meatetarians I can copy to Vegan with a little extra effort...meaning reading all ingrediants when purchasing.

So if you are interested in learning and sharing Please come in. 

BTW I do love growing my own fruits and veggies...I have a wonderful garden every year and many fruits around our yard...many of you may already know this.

I know they make a vegetable broth...is there a beef tasting broth you can use that is vegetarian/Vegan??? I have two wonderful soup recipes...I am sure I can replace the chicken broth with vegetable broth...BUT not sure about the Meatball Soup with the same.

Headlong, I use those crumbles all the time to do chili, spaghetti sauce, casseroles etc. :)

The other thing is really good in a chili is TVP. I find that the TVP will really absorb all the spices and flavors. Plus it is less expensive then the crumbles and stores well.

I have seen a vegetarian "chicken" broth but never a beef one.

HOWEVER, I have this cookbook created by vegetarian monks and they have some recipes for making Unbeef broth. (and unham, unchicken, unfish and unpork lol) I haven't tried unbeef broth yet.

Unbeef Broth 2T soy sauce tsp kitchen bouquet 1T nutritional yeast 1/4C chopped onions 1/8tsp sage rubbed 1 tsp corn oil 2C water

Combine and simmer for 5 minutes after reaching boil.

Thank You Crocus as always...knew I would get some answers as to how *smiles* I know they make veggie meatballs so I should be able to copy this recipe with that!!!

One day when I have a little time, I'll post some of the monk's recipes. It is totally vegan and they have some interesting un-meat substitutes which they make all from scratch.

Whole Foods used to carry Nate's meatballs. (gonna guess they still do) They are really, really good. Trader Joes has some that are cheaper but they aren't as good as Nates.

Yes - it has been a gorgeous day and I wish that I could put things into the ground and see growth as a result. Honestly, I have no talent for gardening. Remember to spring forward tonight and eveyone enjoy another beautiful day tomorrow.

Heya veggies!! I updated the veggie-friendly restaurant list. It is still a little Raleigh-centric. I'm sure that other areas have some restaurants, but I will admit to being clueless about them. I probably should leave Raleigh more often. :D

Hope everyone is having a GREAT weekend!!! I am so glad it is the weekend...it has been a rough one to say the least BUT we made it through!!!

I am so ready to start planting all my goodies in the garden but waiting...some of my plants and trees had to come in again as cooler weather hurts them especially my banana tree. Nothing better then fresh veggies out of the garden!!!

Welcome Tesy...glad you joined as you are on a quest for healthier eating!!! I am here to learn and share some recipes as I make them and have a Friend try *smiles* I do eat fish and chicken but not much on the red meat...learning how to sub for vegan cooking and learning new recipes for veggie cooking.

Hey, I had an idea about how to organize all our recipes so that they are easier to find. :) It is probably going to take me a little while to get it all organized but when it is, perhaps Headlong could put the link in the main description so that the link with all the recipe links won't get lost.

When you guys add recipes, either add the link to the collection blog or put the link here and one of us can add it in. That way all the recipes will stay together and be easy to find.

I am too lazy to alphabetize, but if there is a nice OCD person around who wants to go in there and fix them, it will not hurt my feelings. I just hate alphabetizing things.

you know what I would like a good recipe for? Tampanade! mmmmmmmmmmmmm I know I can google and find a million, but I'd like something more personal. ;P

Good Monday Morning ~ Hope everyone is well. I am selecting my best vegetarian recipes for the GoLo cookbook, including the French Green Bean Casserole for you, Crocus. Should I post a blog of these or is headlong creating the link?

I need to go through all my recipes and find something really tasty to send in to send in for the cookbook. I have this really good black bean, rice, almond, golden raisin casserole that someone once gave me the recipe for that is AMAZING. I just have been kind of making it up as I go along recently, but I would like to actually put the proper recipe in there.

I was told that they are going to have a vegetarian section so it would be nice if the veggies on GOLO all represented. :)

Crocus ~ This sounds perfect and I will be glad to be the guinea pig. That is quite a sacrifice for a longtime vegetarian, no doubt! My recipes are traditional and simple; however, they get the job done. I have already presold a copy of the cookbook to a colleague in Minneapolis.:)

Okay, I mailed off my Cuban Black Bean recipe. I'm going to hunt around for some more to mail in for the cookbook. :)

We went to the Mellow Mushroom Sunday night again. OMG Sooo Good!!! And Sue was excited to learn they have soy cheese so she can also have Pizza there!!!

BTW there is a Mellow Mushroom in Wake Forest...US1 ALT across from the WalMart!!!

I know the one in Durham always has wonderful food...my favorite is Portabella Mushroom, Artichoke, Sun Dried Tomato sub. BUT Sue let me try a taste of her Tempa (spelling) which was so good and I want to try this sub next time. I am not Vegan nor Vegetarian but do enjoy my veggies more then meat. Plus hard for me to give up my fish *LOL*

Hi Friends ~ I lunched at the new Mellow Mushroom Pizza Bakers in Wake Forest on Friday and it exceeded expectations! My cheese and onion thin crust pizza was superb; even better than Satisfaction's in Durham. They were steadily busy and the parking areas were full to capacity. There were vehicles along the perimeter on Wake Drive; and, this congestion was the only negative I encountered.

BlueDevil...Don't you just love the Mellow Mushroom YUM!!! I have yet to be to the one in Wake Forest BUT if it is half as good as the one in Durham I am excited!!! We just learned they do have "soy" cheese for those who are Vegan. Sue was excited she could have cheese on her subs and pizza there. Next time I go I am having what Sue and Kat had...I got to taste a bit of it and YUMMY!!!

And again Thank You Crocus for all you have been doing!!! Amazing!!! I will get to a lot of reading when things calm down a bit for me again...though do they ever *LOL* Another step accomplished by my Daughter yesterday and more bandages removed!!! Got to love young age, fitness, and the ability to bounce back so quickly.

BTW you all would be proud of me...I had a Portabella Mushroom instead of a hamburger last night...hamburgers are not my favorite anyway as is no red meats...and home made sweet potato french fries!!! BUT of course did have my cheese...I love cheese and yet another food I could never live without *smiles* And I am getting braver tasting things I have made...the Vegan Coconut Cream Pie was pretty good BUT a bit to sweet for me. BUT person who I made it for enjoyed so all that matters!!! AND I was told after about 24 hours it was well set. Gosh I was so upset I could not get it to set...lesson learned :)

Hello V&V's!!! Hope everyone is doing well and getting along!!!

Crocus you are my hero!!! You keep up very well with all this stuff better then I could ever. I have been so busy running here and there and every where. I can never Thank You enough for jumping on in with both feet!!!

You would have been proud of me lately as I have been trying new things...Okay can not give up my cheese BUT I have had a Tempeh Sub which was wonderful!!! Even brought half home and my one Daughter took some bites thinking how good the flavor was...then asked what it was *LOL* Last night while they all ate their hamburgers...I am not a big fan of them and never have been...I had my Portabella Mushroom grilled YUM!!! I could so easily convert minus cheese and fish...love them both so much. I have even been skipping most meats I make and just eating the veggies and rice. And patting myself on back for this...instead of ordering Seaseme Chicken for Chinese...Yep Veggies is my new love!!!

I need to go to Mellow Mushroom one of these days! That tempeh sub sounds pretty darned yummy!!!

I had a friend come over for dinner last night and made homemade roast seitan (used the pot roast recipe but roasted it in the oven instead of the stove as I have a shortage of pots) It turned out great!! I'm tempted to make some more today as my friend packed himself a doggy bag and cleaned me out of seitan.

Hey, a great vegan restaurant in Chapel Hill is Sage Restaurant. It's not 'in' Chapel Hill, but right off I40 (gosh, what exit??) I know how to get there, but sure stink on directions! haha..Anyway, it is vegan, and absolutely exquisite!
