Cornbread Crust Batter
2 cups cornmeal mix * I use the Buttermilk Mix 1/2 Cup Buttermilk 1/2 cup Sour Cream 2 Large Eggs....lightly beaten
Stir together all ingredients. Use in "Lima Beans with Cornbread Crust" Recipe .
This comes from "Southern Living...Comfort Food" recipe book. Only one of the many wonderful recipes in this super book!

Bring first 4 ingredients to a boil in a large saucepan over medium-high heat. Reduce heat to low and cover...simmer 25 minutes or until beans are tender. Remove for heat. Preheat oven to 425 degrees. Saute' onion and chile in hot oil in skillet over medium-high heat 2 minutes: remove from heat and stir in to beans. Spoon mixture into a lightly greased 13 x 9 inch baking dish. Spoon Cornbread Crust Batter over beans, spreading to edges of dish. Bake at 425 for 20 minutes or until crust is golden brown. Serves: 6 to 8

(4 - 6 servings)
1 1/2 lbs ground beef, pork, veal, turkey, or combination (I use beef)
3/4 cup fine dry bread crumbs
1 egg
3/4 cup milk
1 teaspoon salt (I leave out the salt)
1/2 teaspoon dry mustard (I use a squirt of reg. yellow mustard, don't have the dry kind)
1 tablespoon ketchup
2 teaspoons Worcestershire Sauce
1/8 teaspoon thyme, tarragon, or your favorite herbs
(I use Gourmet HB seasoning, about a tablespoon or two, thus no need for salt)
(I also add 1/2 half finely chopped onion)
In large bowl, combine all ingredients. Pat mixture into a loaf shape pan and place on 1" rack. NuWave on Power Level #5 for approximately 50 minutes. (During the last 10 minutes, you may want to cover with a sheet of foil if browning too much)
